How To make Ultralight Chocolate Cake
8 Egg whites
1/2 c Unsweetened cocoa powder
1 c Sugar
3 T Vegetable oil, plus extra
-for the pan 2 T Cold brewed coffee
1/4 t Vanilla extract
1 Grated rind of small orange
1/2 c Whole almonds, toasted and
-finely ground 2 T Flour, + extra for the pan
2 T Confectioners' sugar
1 c Fresh berries
From "Little Meals" by Rozanne Gold (Villard Books, 1993). Preheat oven to 350'F. Beat 6 of the egg whites until stiff. Set aside. In medium bowl, combine cocoa with sugar, oil, remaining 2 egg whites, coffee, vanilla extract and orange rind. Mix ground almonds with flour and then add to cocoa mixture. Stir well. Add 1/3 of the beaten egg whites. Mix with rubber spatula. Then fold in the remainder of the beaten egg whites. Pour into an oiled and floured 8*" springform pan. Bake for 25 minutes at 350'F. (Be careful not to overbake.) Remove from oven and allow cake to sit for 10 minutes before removing from springform pan. Cool completely. Put dolly (or stencil of your choice) on top of cake. Sprinkle with confectioners' sugar, then remove dolly carefully, leaving lace design. Serve with fresh berries on the side. Make 6 little desserts. Per serving: 335 calories, 12 grams protein, 42 grams carbohydrates, 15 grams fat, 1 gram saturated fat, 0 milligrams cholesterol, 79 milligrams sodium.

DIY Angel Food Cake
Angel food cake is a super light donut shaped sponge cake that is egg yolk free, butter free and a really fun challenge to make, apparently it caused quite a problem on episodes of the Bake off and Masterchef! It has a very light texture (the 12 egg whites probably help here!) and puffs up into huge wedges when baked. In the UK we have angel cake which is 3 different colour tiers of cake, but angel food cake is a much more meringue like batter, that tastes incredible! I hope you give this a try, it's a fun recipe project to attempt!

Backpacking Chocolate Cake | Frybake Cooking

NOLS Cookery Backpacking Chocolate Cake Recipe:
(For the 8 pan in this video I did half the recipe)
- Serves 4 from a 12-inch fry pan -
1 1/2 cups baking mix
1/2 cup flour
2/3 cup cocoa
2 level Tbs. powdered egg (or 2 real eggs)
Pinch of Salt
4 Tbs. brown sugar or honey
1 1/2 cups cold water (approx. - for a pourable batter)
2 to 3 Tbs. butter, melted
1 tsp. vanilla
Mix all dry ingredients. Add liquid ingredients and mix until lumps are gone. Pour into greased, flour fry pan. Cover and bake, using a twiggy fire, 15-25 minutes or until done.

Tres Leches Cake - A must try Mexican dessert! This ultra light cake is soaked with a 3 milk mixture and topped with a lightly sweetened whipped cream. Hope you enjoy this making this as much as I do.

INGREDIENTS:
Sponge Cake:
-3 Egg whites
-1/2 Tsp vinegar/lemon juice/cream of tartar
-1/2 Cup caster sugar
-3 Egg yokes
-1/2 Cup milk
-1 Tsp vanilla extract
-1/2 Cup all-purpose flour
-1 Tsp baking powder
-1/4 Tsp salt
Milk Bath:
-1/3 Cup whipping cream/evaporated milk
-1/3 Cup whole milk
-1/4 Cup condensed milk
Frosting:
-1 Cup whipping cream
-1-2 Tbsp sugar
-1 Tsp vanilla extract
7x7x3 square pan
-Take 3 large eggs, separate the egg whites and yolks into two different bowls.
-Add 1/2 Tsp vinegar/lemon juice/cream of tartar to the egg whites, using a stand mixer or electric hand mixer whisk the egg whites on high speed. Gradually add 1/2 cup of sugar as you mix and continue beating until stiff peaks form.
-Beat the egg yolks. Add ½ cup of milk and 1 tsp vanilla extract and mix until combined. Add in ½ cup all-purpose flour, 1 tsp baking powder, ¼ tsp salt and mix until there are no lumps. Don’t over mix.
-Gently fold in the egg whites into the yolk batter until just combined. Pour the batter into prepared baking dish and spread into an even layer. Bake in a pre-heated oven for 20-25 minutes at 160 degrees C or until a toothpick inserted into the center of the cake comes out clean.
-Remove the cake from the pan and let it cool on a wire rack. For the milk bath: Combine the whipping cream, whole milk and condensed milk together.
-Once the cake has cooled, transfer it back into the same pan. Pierce the cake several times with a fork/toothpick. Pour the tres leches syrup evenly all around the cake. Set the cake aside for one hour or refrigerate overnight allowing it to soak up the syrup.
-In the meantime, whip the heavy cream, sugar and vanilla essence until stiff peaks. Release the cake from the pan and spread the whipping cream over the top of the cake.
-Trim the edges (Optional) and cut into squares. Serve cold garnished with strawberries or dust with cinnamon if desired. Enjoy!
-Store the cake in refrigerator up to 3 days!

EASY TRES LECHES CAKE RECIPE | How to Make Three Milk Cake ????
The EASIEST homemade Tres Leches Cake. An ultra light cake soaked in a sweet milk mixture and topped with fresh whipped cream and caramel sauce. Try this simple version for an afternoon treat or coffee. Enjoy!
You'll need
5 eggs
3/4 cup granulated sugar
1 1/2 cups flour
2 tsp baking powder
2 tsp vanilla sugar
For the milk sauce;
3 1/2 cups milk (700 ml)
3 tbsp granulated sugar
200 ml heavy cream
For the caramel sauce;
1/2 cup sugar
2 tbsp butter
200 ml heavy cream
For the top;
1 pack whipped cream powder (75g)
1 cup cold milk (200 ml)
1 cup = 200 ml
