1/2 c Butter 1 c Sugar 2 c Flour 1/2 c Milk 2 ts Baking powder 1/2 ts Salt 2 c Blueberries 1 ts Vanilla 2 Eggs Sugar, for topping Cream butter and sugar. Add eggs, one at a time. Mix until blended. Sift all dry ingredients, add alternately with milk and vanilla. Mash 1/2 cup blueberries; stir into batter. Add remaining whole berries. Grease tins or use liners. Pile batter high. Sprinkle with sugar. Bake at 375F for 30 minutes. Makes 12 muffins.

Gluten Free & Plant Based Healthy Blueberry Muffins Recipe:
Blend together: 2 Bananas 2 Tbsp soaked flax seed 1 Cup soaked & drained/rinsed buckwheat groats 1 tsp vanilla 1/4 cup maple syrup 3/4 cup coconut milk (add more if needed to mix) 1 Tbsp lemon Juice
Dry Ingredients: Zest of one lemon 1/2 cup each of almond flour, sweet rice flour, & coconut flour 1 tsp salt 2 tsp baking soda 2 Tbsp coconut sugar
Fold in: 1 1/2 cup blueberries (frozen or fresh) *sprinkle each muffin generously with coconut sugar Bake @ 350 for 30-40 minutes (baking times vary, especially if you use frozen blueberries vs fresh)
