Ingredients
JHALFREZI MASALA
• black peppercorn 1tsp
• whole red chilly1 tsp
• whole coriander seeds1tsp
• whole jeera 1tsp
• carrots1/2 cup
• capsicum 1/2 cup
• french beans 1/2 cup
• cauliflower 1/2 cup
• green peas 1/2 cup
• Oil 1 tbsp
• jeera 1 tsp
• chopped onion 1 cup
• chopped garlic2 tsp
• chopped ginger 1 tsp
• chopped chilies 1 tsp
• tomato chopped 1 cup
• red chilly powder1 tsp
• turmeric powder1 tsp
• coriander powder1 tsp
• salt to taste
• chopped coriander
Method
• dry roast black peppercorn, whole red chilly, whole coriander seeds, whole jeera, and then pound together ingredients of JHALFREZI masala
• heat oil add jeera crackle
• Then add chopped onion cook till golden brown
• Then add chopped garlic, chilly, and ginger
• Next to add powder masala red chili powder, salt, turmeric, coriander powder, and cooked
• Then add chopped tomato and cook
• Then add (carrot, french beans, tomato, capsicum, cauliflower) vegetables and toss
• Then add JHALFREZI masala we are made before and mixed all
• finish with chopped coriander

Vegetable Jalfrezi
Serves 4-5
Recipe in English:
Ingredients:
-Cooking oil 2 tbs
-Makhan (Butter) 2 tbs
-Zeera (Cumin seeds) ½ tbs
-Lehsan (Garlic) crushed 1 tbs
-Adrak (Ginger) crushed 1 tbs
-Hari mirch (Green chillies) 3-4
-Pyaz (Onion) sliced 1 large
-Tomato puree ¼ Cup
-Tomato ketchup 2-3 tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Haldi powder (Turmeric powder) ¼ tsp
-Namak (Salt) 1 tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Paprika powder 1 tsp
-Water ½ Cup or as required
-Fauji Fresh n Freeze Frozen aloo,matar,gajar 500g
-Shimla mirch (Capsicum) deseeded & cubes 1 medium
-Tamatar (Tomato) deseeded & cubes 1 medium
-Garam masala powder 1 tsp
-Kasuri methi (Dried fenugreek leaves) ½ tbs
-Hara dhania (Fresh coriander) chopped 2-3 tbs
Directions:
-In a wok,add cooking oil,butter & let it melt.
-Add cumin seeds and mix.
-Add garlic,ginger,mix well & cook for a minute.
-Add green chillies,onion & sauté for a minute.
-Add tomato puree,tomato ketchup & mix well.
-Add red chilli powder,black pepper powder,cumin powder,turmeric powder,salt,coriander powder, paprika powder,mix well & cook on low flame until oil separates (1-2 minutes).
-Add water,mix well & bring it to boil.
-Add frozen aloo,matar,gajar and mix well,cover & cook on low flame for 4-5 minutes.
-Add capsicum,tomato & mix well.
-Add garam masala powder,dried fenugreek leaves,fresh coriander & mix well.
-Serve with chapati.

-Zeera dal ker mix ker lein.
-Lehsan aur adrak dal ker ache tarhan mix kareun aur ek minute kliya paka lein.
-Hari mirchein aur pyaz dal dein aur ek minute kliya sauté ker lein.
-Tomato puree aur tomato ketchup dal ker ache tarhan mix ker lein.
-Lal mirch powder,kali mirch powder,zeera powder,haldi powder,namak,dhania powder aur paprika powder dal ker ache tarhan mix karein aur halki ancch per oil alag ho janay tak paka lein (1-2 minutes).
-Pani dal ker mix karein aur ubal anay dein.
-Frozen aloo,matar,gajar dal ker ache tarhan mix karein aur halki ancch per 4-5 minutes kliya paka lein.
-Shimla mirch aur tamatar dal ker ache tarhan mix karein.
-Garam masala powder,kasuri methi aur hara dhania dal ker mix ker lein.
-Chapati ka saath serve karein!

Vegetable Jalfrezi is a mixed vegetable stir-fry that goes well with any type of flatbreads and rice! It also tastes delicious.
This vegetable jalfrezi has spicy, slightly sweet and sour flavors and is loaded with lots of nutritious and colorful veggies and paneer. What else do we want in a meat-free curry?
The wonderful thing about this Vegetable Jalfrezi is that you simply make the base sauce and add whatever vegetables are handy. You can even add canned beans to it. So flexible, isn't it?
On days when you don't have time for chopping vegetables, you can go with the bag of your favorite frozen bag of mixed veg. This would come out great.

☛ 2 teaspoons oil/ghee
☛ 1 teaspoon cumin seeds
☛ 2 dried red chilies
☛ 1 large-sized onion, sliced
☛ 1 tablespoon ginger, chopped
☛ 1 tablespoon garlic, chopped
☛ 1 cup tomato puree
☛ 1.5 tablespoons tomato ketchup
☛ 1 teaspoon red chili powder
☛ 1 teaspoon coriander powder
☛ 1/2 teaspoon turmeric powder
☛ 1 teaspoon cumin powder
☛ 1 tablespoon ginger, julienned
☛ Salt, to taste
☛ 1/4 cup carrot
☛ 1/4 cup green bell pepper
☛ 1/4 cup yellow bell pepper
☛ 1/4 cup red bell pepper
☛ 1/4 cup orange bell pepper
☛ 1/4 cup sliced mushroom
☛ 1/2 cup french beans
☛ 1/3 cup green peas (frozen or boiled)
☛ 1/3 cup cauliflower, boiled
☛ 1 medium-sized tomato, sliced
☛ 1/4 cup baby corn, boiled
☛ 1 green chili, slit
☛ 1 teaspoon garam masala powder
☛ 1 teaspoon Kasuri methi
☛ 200 grams paneer, cubed
☛ 1 tablespoon chopped, cilantro (coriander) leaves
☛ !!For serving:
☛ 1 tablespoon chopped, cilantro (coriander) leaves
☛ 1 tablespoon ginger, julienned
For Garnishing:
☛ Edible silver leaves (optional)
☛ 2 tablespoon of sliced almonds or almonds silvered (optional)
!!How to make Vegetable Jalfrezi:
1. Heat ghee/oil in a pan over medium heat.
2. Once hot, add cumin seeds and dried red chilies.
3. Once the seeds start to splutter, add sliced onions.
4. Sauté for 2 minutes.
5. After 2 minutes, add chopped ginger and chopped garlic.
6. Mix well and sauté for 2 more minutes.
7. Now, add tomato puree, tomato ketchup, and mix everything well. Cook for 2 minutes.
8. After that, add red chili powder, coriander powder, turmeric powder, and cumin powder.
9. Mix well to combine and cook for 2 more minutes.
10. Add salt to taste and mix well.
11. Now, add carrots, bell peppers (yellow, green, red, orange), french beans, mushrooms, green peas, sliced tomatoes, and boiled baby corn.
12. Toss well to combine. Cook for 3-4 minutes; stirring occasionally.
13. Now add garam masala powder, Kasuri methi, vinegar, sliced ginger, and paneer.
14. Toss everything well. Lastly, add boiled cauliflower and mix well until combined.
15. Cook for 3-4 minutes or until all the vegetables are tender and soft. Keep stirring occasionally.
16. Add chopped coriander leaves and mix again. Cook for 2 more minutes.
17. Transfer vegetable jalfrezi to a serving dish and garnish with cilantro leaves and ginger juliennes. Serve hot with roti or paratha.
