How To make Vellirikkai Thogayal
1 lg Cucumber
3 tb Sesame oil
1 ts Black mustard seeds
1 ts Urad dal, white
1/2 ts Methi (fenugreek)
2 Dried red chillies
1/2 tb Tamcon paste
1 pn Hing
Salt; to taste Peel cucumber, slit into half, scoop out seeds. Slit into further narrow strips and cut tiny pieces as for kachumbar. Should not be grated as this gives no 'bite' feel in the mouth. Next, warm the oil and fry all ingredients except the tamarind. Mustard should stop spluttering and dal/methi should turn brown. Drain out these fried spices into a blender, leaving oil behind in pan. Add cucumber and stir fry for two minutes, no more. Add tamcon to spices in blender and with half the cucumber run on low speed till everything looks coarsely ground and blended. Remove into a bowl, add remaining cucumber pieces and mix well. இந்த பொரியல் மிகவும் சத்தானது. இரத்த சர்க்கரை அளவுகள் குறைய உதவும், இரத்த அழுத்தத்தை சீராக வைக்கும், மலச்சிக்கலை போக்கும், நீர்ச்சத்து நிறைந்தது, சிறுநீரக கற்கள் வராமல் தடுக்க உதவும், தோலுக்கு நல்லது, உடல் பருமன் குறைய உதவும்.
This dish is rich in vitamins & minerals. Good for weight loss, lowers the blood sugar, hydrates the body, rich in antioxidants, controls blood pressure, prevents constipation, nourishes skin, prevents urinary stones.
Recipe:
Take few cucumbers (Gherkin) and remove the rough skin after washing. Chop them finely and keep aside. Take a pan and add 4 tsp of vegetable oil after heating. Now add mustard, cumin & asafoetida powder. After few seconds add chopped cucumber and mix well. Then add chilly powder 1 tsp, garam masala 1 tsp, salt & mix them well. Cook in medium flame for 10 minutes. Our delicious & healthy cucumber masala is ready.

Ingredients
Big Cucumber ( vellarika 1 no)
Garlic 1 pod
Coconut 1/2 cup
Mustard seed a big pinch
Oil 1/4 tsp
Jeera a big pinch
Green chilly 1 no or to taste
Few Curry leaves
Small onion ( sambar onion) 1 no
Salt to Taste
Preparation
Time 30 minutes
Method
1.Cut the big Cucumber into small cube pieces.
2.Grind the garlic , small onion a big pinch jeera and a big pinch mustard seeds
3.Slit the green chilly.
4.Put the ground garlic onion paste in coconut and grind it coarse one , one whip is enough
5. Heat Oil in a wok
6.Add mustard seed.
7.Once the mustard seed pops add the cucumber and the slit green chilly, sprinkle little water, cook in medium flame
8.When the Vegetable is half cooked add the grinded coconut.
9.Once done garnish with Curry leaves.
10. Vellai vellarika poriyal ready.
Served best with Sambar ,papadam.
