Fideos Secos con Chorizo y chipotle | Dry Noodles with chorizo and chipotle
Deliciosa Y Sencilla Receta de Fideos secos con chorizo y chipotle ????????????????????????????????
Ingredientes
1 pieza de chorizo de res
3 cdas de aceite de aguacate
1 bolsa de fideos
Para la salsa:
½ taza de puré de tomate
¼ de pieza de cebolla
2 piezas de chipotle
2 gajos de ajo
2 cdas de crema
2 ½ tazas de agua o caldo de pollo
1 cucharada de Caldo de pollo en polvo
Para decorar
Queso fresco o panela partido en cuadros chicos
Crema
Cebolla picada
Cilantro picado
Tortillas de maíz
Tips
Se cocina fuego medio
Puedes utilizar chorizo de cerdo o de soya
Prepara la salsa antes del chorizo
Fríe el chorizo y el fideo por 4 minutos, hasta que esté ligeramente dorado
Cuando agregues la salsa baja la flama y alrededor de 10 minutos se tarda en evaporar
No olvides menear ocasionalmente
Menea para que se evapore más pronto la salsa
Si quieres preparar tacos solo calienta la tortilla que esté un poco dorada para que le dé un toquecito crujiente

Dry Noodles with Chorizo and Chipotle Delicious and simple recipe ????????????????????????????????
Ingredients
1 piece of beef chorizo
3 tbsp avocado oil
1 bag of noodles
For the sauce:
½ cup tomato puree
¼ piece of onion
2 pieces of chipotle
2 garlic wedges
2 tbsp cream
2 ½ cups water or chicken broth
1 tablespoon chicken bouillon powder
To decorate
Fresh cheese or panela divided into small squares
Cream
Chopped onion
Chopped cilantro
Corn tortillas
Tips
Cook medium heat
You can use pork or soy chorizo
Prepare the sauce before the chorizo
Fry the chorizo and fideo for 4 minutes, until lightly golden
When you add the sauce lower the flame and about 10 minutes it takes to evaporate
Don't forget to wiggle occasionally
Stir so that the sauce evaporates faster
If you want to prepare tacos, just heat the tortilla that is a little golden to give it a crispy touch.

This week on Basics, I'm showing you how to make the meatiest chili con carne and the best ever vegetarian chili. Both use chili paste that you can make from scratch.

Ingredients & Shopping List:
+ For the chili con carne:
2 pasilla chiles (dried whole)
4 arbol chiles (dried whole)
4 chipotle chiles (dried whole)
3 guajillo chiles (dried whole)
3 ancho chiles (dried whole)
1 whole chuck roast
Vegetable oil
1 white onion, roughly chopped
6 cloves garlic, crushed
4 cups chicken stock
Cinnamon
Ground allspice
Ground coriander
Dried oregano
2-3 Tbsp tomato paste
2-3 Tbsp masa harina
2 limes, juiced
Shredded cheese, for garnish
+ For the vegetable stock:
1 white onion
4 ribs celery
1 bulb fennel
1 parsnip, peeled
3 carrots
1 leek
1 small head cauliflower
2 beets
Vegetable oil
Sprigs of fresh thyme
Small head of garlic, halved
1 bunch parsley
2 dried bay leaves
1 Tbsp whole black peppercorns
1 handful dried porcini mushrooms
2 sheets dried kombu
+ For the vegetarian chili:
2 pasilla chiles (dried whole)
4 arbol chiles (dried whole)
4 chipotle chiles (dried whole)
3 guajillo chiles (dried whole)
3 ancho chiles (dried whole)
2 dried porcini mushrooms
3 poblano peppers
3 jalapeno peppers
2 large onions, roughly chopped
Olive oil
6-7 cloves garlic, roughly chopped
2-3 Tbsp tomato paste
3 tsp toasted cumin
Ground coriander
Dried oregano
1 can cannellini beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can pinto beans, drained and rinsed
14oz can diced tomatoes
14oz can fire-roasted diced tomatoes
1 tsp liquid aminos
2 Tbsp nutritional yeast
3 cups vegetable stock (ingredients above)
Sour cream and sliced jalapenos, for garnish

QUICK + EASY TEX-MEX Mexican Style Soup Recipe!
Learn how to make an incredible spicy vegan Mexican soup in just literally minutes!
LAY HO MA!! This recipe is going to be a lifesaver for the days where you just can't be bothered. This spicy Mexican soup is fast, simple, and absolutely packed with flavour. Join me in this episode and learn how to make my version of a spicy vegan Mexican soup.
Ingredients:
1/2 red onion
2 pieces garlic
1 scotch bonnet (optional! very spicy!)
2-3 tbsp olive oil
1/2 tbsp cumin
1 1/2 tbsp smoked paprika
1/2 tbsp chili powder
2 tbsp dried oregano
1 800ml can peeled tomatoes
1 can black beans
2 cups corn
6 cups water or vegetable stock (plus 1 tbsp pink salt if using water)
3 tbsp tomato paste
2 tbsp cane sugar
1 avocado
1 small bunch cilantro
few tortilla chips
Directions:
1. Dice the red onion and garlic
2. Remove the seeds from the scotch bonnet and finely chop
3. Heat up a stock pot on medium high heat and add the olive oil
4. Add in the onions, garlic, and pepper followed by the dry spices
5. Give the pot a stir and add in the canned tomatoes (carefully!)
6. Use a spatula to break up the tomatoes
7. Add the beans, corn, and the water/veggie stock
8. Add the tomato paste and the cane sugar
9. Bring the soup to a boil, then its ready to serve
10. Top the soup with avocado cubes, fresh cilantro, and some crushed tortilla chips

2 teaspoons red pepper flakes, or to taste

1/2 cup freshly grated parmesan, more to taste
