How To make Vermicelli with Ricotta Cream Sauce
1 1/2 c Part-skim ricotta cheese;
-room temperature 1/2 c Skim milk; room temperature
2 T Imported Parmesan cheese;
-freshly grated 1 ts Lemon rind; grated
1/4 ts Nutmeg; freshly grated
2 T Chives; snipped OR
2 T Top part of green scallion
1/4 c Italian parsley leaves; well
-packed 1/4 ts Coarse salt; optional
1/2 ts White pepper; freshly grated
12 oz Vermicelli
2 ts Italian parsley; minced for
-garnish In food processor, place ricotta cheese, milk, Parmesan cheese, lemon rind, nutmeg, snipped chives, parsley, salt, and pepper. Process until chives are finely minced and ricotta has the texture of lightly whipped cream, about 45 seconds. Cook pasta in 6 quarts boiling water with 2 tsp. coarse salt (optional) until al dente. Drain pasta and return to pot in which it was boiled. Quickly toss pasta with the cream sauce. Transfer to 4 pasta bowls. Garnish each with 1/2 tsp. parsley and serve.

Ingredients -
500g (1.1lbs) - Pasta of your choice (I used shells)
1 Tbsp (14g) - Unsalted Butter
1 tsp (5ml) - Olive Oil
6 - Garlic Cloves, Minced
1/3 Cup (80ml) - Chicken or Vegetable Stock
400ml (13.5floz) - Thickened Cream (Heavy Cream, Whipping Cream)
120g (4.2oz) - Baby Spinach, Washed
60g (2.1oz) - Grana Padano Cheese, Freshly Grated
5g (0.2oz) - Flat Leaf Parsley or Basil, Roughly Chopped

Penne mit einer Ricotta Tomaten Sauce - Ich glaube das jeder mindestens ein richtig atemberaubendes Pasta Rezept kennen sollte. Und was gibt es noch besseres als frische Pasta? Ganz genau, ich kann die Rufe nach cremigem Ricotta schon hören. Ich weiss nicht wie es euch geht, aber sobald ich Ricotta und Pasta höre dann blüht mein Herz so richtig auf!
Wie immer zeige ich euch wie ihr easy wahre Geschmackserlebnisse kreieren könnt und so und nicht anders schmecken auch meine Penne mit Tomaten und Ricotta überbacken. Der im Ofen gegarte Ricotta mit den Cherrytomaten, den Zucchini und etwas Salz und Pfeffer ergibt eine cremige Pastesauce welche perfekt zu z.B. Penne passt.
Wusstet ihr das Ricotta sich mit seiner weich-cremigen Konsistenz und seiner würzigen Note optimal für die Verfeinerung von Saucen eignet?
Das ist eine echte Alternative zum klassischen Rahm und auch etwas leichter.
Für die Ricotta Sauce backt ihr alle Zutaten zusammen im Ofen auf und vermischt am Ende alles zusammen mit den Penne. Und tadada…..euer schnelles Abend oder Mittags Dinner ist schon serviert!

Easy dinner! Delicious cream meat sauce made with ricotta, cream cheese and parmesan! Cheesy goodness!

You will need:
1 lbs of pasta (just boil after the package)
½ lbs of minced beef
4 cloves of garlic
Extra virgin olive oil
Salt and pepper
1 tbsp of dried basil
½ lbs of passata
1/4 lbs of ricotta
7 oz of cream cheese
5 tbsp of parmesan cheese
Fresh basil for the top

►3 1/2 cups half and a half *
►1/4 cup parsley, finely chopped, plus more for garnish

►3 Tbsp olive oil divided
►1 Tbsp butter
*To substitute half and half, use equal parts of milk and heavy cream
