Lambswool Wassail Recipe
Claire Ridgway has fun making a traditional Tudor drink - Lambswool. In the video she makes the drink, and it's a delicious alternative to the more common mulled wine that people drink today.
Lambswool/Wassail Recipe
1.5 litres of traditional real ale/stout/cider
6 small cooking apples, cored
1 nutmeg, freshly grated
1tsp ground ginger
150g brown sugar
Oven temperature: 120°C/250F/Gas Mark 1/2 to 1 (cool oven)

Full Recipe:
“Make several incisions into the rind of a lemon; stick cloves in these incisions, and roast the said lemon by the fire. Put small but equal quantities of cinnamon, mace, cloves, and allspice, and a race of ginger, into a saucepan, with half a pint of water; let it boil until it be reduced one half. Boil one bottle of port wine; burn a portion of the spirit out of it, by applying a lighted taper to the saucepan which contains it. Put the roasted lemons and spice into the wine; stir it up well, and let it stand near the fire ten minutes. Rub a few nobs of sugar on the rind of a lemon; put the sugar into a bowl or jug, with the juice of half a lemon, (not roasted) pour the wine upon it, sweeten it to your taste, and serve it up with the lemon and spice floating in it.”

24 whole cloves
2 sticks of cinnamon
¼ teaspoon ground mace
⅛ teaspoon ground cloves
¼ teaspoon ground allspice
An inch of ginger, peeled and sliced
1 1/4 cup (300ml) water
½ cup (65g) powdered sugar
The juice of half a lemon
One 750ml bottle ruby port

???????? This holiday season I’ve had one of two drinks in my hand – the Christmas Cranberry Champagne ???? or the Winter Wassail Christmas Cocktail. My mother-in-law Kathy brought this wassail drink to Thanksgiving this year, and ever since I’ve been hooked!
What exactly is a wassail?
Wassail (/ˈwɒsəl/, /-eɪl/; Old Norse “ves heil”, Old English was hál, literally: be hale) is a beverage of hot mulled cider, drunk traditionally as an integral part of wassailing, a Medieval Christmastide English drinking ritual intended to ensure a good cider apple harvest the following year. ???????? You can make your own homemade wassail, but if you have a Trader Joe’s they make a winter wassail that they carry in store that is delicious! This is what I use to make this wassail cocktail – it is so easy and quick!

Wassail Season! | WassailFest New Braunfels | Wassail Recipe
How about a little Wassail in your life this year! WassailFest New Braunfels is back this year after the pandemic haitus last year, and my goodness the town was ready to get together and celebrate the season! Suzanne and I went downtown Thursday night to test-taste the various leaded and un-leaded concoctions provided by all of the local businesses and organizations. The crowd was large, cheerful and grateful as the wassail flowed aplenty from every decorated doorstep. Thanks New Braunfels! Also, Suzanne shares a simple wassail recipe for the unworldly and artless crowd (us, in a chestnut shell) that I almost favor over everything else we tried!
