How To make White Chocolate Cheesecake with Raspberry Sauce
CRUST 1 c bread crumbs
1/4 c chopped almonds
1/4 c butter
1/2 tsp cinnamon
1/4 c sugar
CAKE 6 oz White chocolate chips
1 lb Cream cheese
3/4 c Sugar
3 Eggs
1 1/2 ts Vanilla extract
3/4 c Sour cream
2 tb Unsweetened cocoa
RASPBERRY SAUCE 2 1/2 c Raspberries
Sugar -- to taste 1 tbsp Grand Marnier
Place chocolate in a double boiler and heat over hot water until it melts. Stir to blend and let cool to room temperature.
Microwave almonds and butter for crust for 1 minute. Stir dry crust ingredients together in 9" springform pan. Add butter and nuts and pat firmly onto bottom. Grease sides of pan.
With an electric mixer, blend cheese and sugar until smooth. Mix in eggs, vanilla, and sour cream. Stir in melted chocolate. NOTE: it is important to have the cheesecake ingredients and the melted chocolate close to the same temperature when they are combined so that they blend together smoothly. Pour into pan. Put another pan with water into the preheated oven. This will prevent the top of the cheesecake from cracking. Bake in the middle of a preheated 325F oven for 45 minutes or until just barely set. Turn off the oven, leave the door ajar, and let cool in oven for 1 hour longer. Chill. Just before serving, dust cocoa through a sieve making a ring around the cheesecake.
Prepare raspberry sauce: Reserve 1/2 cup raspberries for garnish. In a blender, puree the remaining berries and push through a sieve. Stir in sugar to taste and the Grand Marnier. To serve, spoon raspberry sauce on to desert plates. Remove pan sides of cheesecake and cut into wedges. Place on raspberry sauce and garnish with berries.

The raspberry cheesecake / cotton sponge cake / raspberry jelly recipe (the final cake size: 16 x 16cm / 6 x 6in)

Cotton Sponge Cake (chiffon), pan size 15 x 10 in (or 25 x 40cm)
3 egg yolks
45ml milk (3 tbsp)
45ml oil (3 tbsp)
5ml vanilla extract (1 tsp)
55g cake flour (7 tbsp)
3 egg whites
a pinch of salt
50g sugar (4 tbsp)
Bake at 170C for 20 - 22 minutes (preheated oven)
Raspberry Coulis
200g forzen or fresh raspberries (7oz or 1.5 cups)
50g sugar (4 tbsp)
2 tsp lemon juice
Cook 5 minutes over medium heat, sift to remove seeds and cool down
Raspberry Cream Cheese
200g cream cheese (7oz), softened
40g sugar (3 tbsp)
200ml heavy cream (1 cup)
70g raspberry coulis (1/3 cup)
6g powder gelatine (2 tsp), bloomed with 30ml (or 2tbsp) water and melt in the microwave for 10 - 12 seconds
Raspberry Jelly
75g raspberry coulis (1/3 cup)
75ml water (1/3 cup)
6g gelatine powder (2 tsp), bloomed with 30ml (2 tbsp)water and melted
Raspberry Syrup
2 tbsp raspberry coulis
3 tbsp water

Show your love with this decadent cheesecake. Creamy white chocolate filling on an Oreo cookie crust topped with a chocolate raspberry sauce. Creamy dreamy and oh so satisfying. The perfect Valentine's Day dessert.
For the crust:
36 Oreo cookies, crushed
4 T. butter, melted
For the filling:
4 8oz. bricks of cream cheese, softened to room temp.
3/4 c. sugar
1/2 c. heavy whipping cream
1/2 c. sour cream
8 oz. of white chocolate, melted and slightly cooled
1 T. vanilla
4 eggs
2 T. flour, optional
Chocolate Raspberry Sauce:
1/4 cup sifted unsweetened cocoa powder
1 Tbsp Ball®RealFruit™ Classic Pectin
2 1/4 cups crushed red raspberries
3 1/2 cups granulated sugar
2 Tbsp. bottled lemon juice
2 Tbsp. Chambord (optional)
