How To make Wild Mushroom Soup (Minestra Di Funghi Selvatici)
Ingredients

dried porcini mushrooms, about 8 large pieces

potatoes

carrots

onion

shallot

mushrooms, wild, or cultivated fresh
2
ounces
bacon, 2 slices
10
tablespoons
olive oil
2 1/2
quarts
chicken broth, fresh made or canned chicken broth
1
teaspoon
salt
1/4
cup
parsley, minced flat-leaf, fresh
1
pepper, freshly ground
Directions:
PREPARATION: Put dried porcini mushrooms in a small bowl with 1/2 cup hot water. Let stand until softened, about 20 minutes. Remove mushrooms and strain liquid through a fine sieve.
Return mushrooms and liquid to the bowl; discard the sediment. Peel and coarsely shred the potatoes and carrots. Peel and coarsely chop the onion. Peel and mince the shallot.
Thinly slice the fresh mushrooms. Mince the bacon.
COOKING: Heat 5 tablespoons of the oil in a 6-quart soup kettle. Add the bacon and onions and saute over medium heat until the onions soften and the bacon is translucent, about 2 minutes.
Bring broth to a boil in a large saucepan. Add the boiling broth to the soup kettle along with the potatoes, carrots, porcini mushrooms, and reserved mushroom liquid. Return to a boil and simmer until vegetables are tender, about 10 minutes.
Heat remaining oil in a large skillet. Add the fresh mushrooms and salt and saute over medium until mushroom liquid has evaporated, about 10 minutes.
Add mushrooms to the soup kettle and simmer for 30 minutes. Adjust seasoning if necessary.
SERVING: Ladle soup into warm bowls. Sprinkle with parsley and ground black pepper. Serve immediately.

I'm pretty picky about my mushroom soup, and I have absolutely no interest in a yucky can of condensed cream of whatever. So using lots of fresh ingredients, plus a package of dried wild mushrooms, we're going through every step of how to make my favorite gourmet mushroom soup. It looks and tastes like it was crafted by a snooty French chef, but you can make this right at home without a lot of fuss.

FAST wild mushroom soup recipe. Luscious, creamy mushroom treat topped with crunchy bacon bits. Takes minutes to make. Chanterelle/wild summer mushroom season is NOW!
Wild Mushroom Soup
Box of mushroom stock
Heaping cup of peeled and diced red potatoes
1 tsp. thick mushroom soy sauce
Bring to a boil and cook until potatoes are tender
Separate pan brown a package of uncured bacon. Remove, drain, cool to a warm temp.
In the bacon pan sauteé wild mushrooms of choice make sure the pan is very hot. After browning add butter and evoo, salt, pepper, fresh chives, old bay.
To the stock add corn from one half ear of good sweet corn already cooked and removed from the cob, corn starch to thicken, cooked mushrooms reserving some for garnish, 1 TBSP bacon grease, salt, pepper to taste. Simmer until the thickening begins.
Add heavy cream to taste and bring up to a simmer. Taste for seasoning level and adjust if needed.
Serve piping hot with warm bacon crumbles, fresh chives and garnish mushrooms on top. Some folks like oyster crackers or saltines with this. Me, not so much.

Check out how to make this super deicious and nutritious WILD MUSHROOMS SOUP with WHEY and SMOKED PORK RIBS in beautiful Bucovina, Romania. This dish is made with organic dairy products from STANA BUCOVINEANA.
This time we are going down to memory lane to discover an almost forgotten recipe which I used to enjoy every summer at my grandparents home. My late Grandma used to wake me up with this delicious dish on the cold rainy days. After my grandma passing, it has been many years since I have not eaten this soup.
I wanted to recreate this recipe as a celebration of her memory.
In order to make the same recipe I knew that I had to use only the best organic and fresh ingredients I could find.
Lucky for me it was not hard at all because in our area we still have good hard working people which are making organic dairy products.
If you want to try one the best dairy products from Bucovina, you should make a visit to the Bacania Fermei (in Campulung Moldovenesc), a small but lovely store filled up with all kind of organic and locally made goodies such as freshly made butter, yoghurt, sour cream and cheese made by Stana Bucovineana.
Ingredients used:
2 l of Organic Whey
250 g of organic Sour Cream
500 g of Wild Mushrooms
2 l of Water
Salt
Black Pepper
Mix of Spices (wild Thyme or regular Thyme, Bay Leaves)
Smoked Pork Ribs
2-3 Eggs
2 Onions
4-5 Garlig Cloves
Spring Onions
1-2 Carrots
1 Celery
1 Parsnip
1 Bell Pepper
1 Chilly
