How to Make Peppermint Mocha Brownies | Winter Wonder Month | The Sweet Spot

It's that time of year when nothing beats a warm peppermint mocha from Starbucks, but this brownie recipe will definitely tickle your taste buds. You can't beat it! From my home to yours, enjoy!

Brownie Ingredients:
1 cup all-purpose flour
1 cup unsweetened cocoa powder
1 cup granulated sugar
3/4 cup light brown sugar, packed
3 large eggs
1/2 tsp peppermint extract
1/2 tsp espresso powder
1 1/4 cups milk chocolate chips
1 cup unsalted butter
Method:
Preheat oven to 350 Fahrenheit.
Spray an 8x8 square pan with a non-stick baking spray.
Sieve flour, cocoa powder, both granulated and brown sugars, and espresso powder into a large bowl and set aside.
Melt butter and chocolate in a small pot over medium heat until combined. Let cool.
Add eggs one at a time to dry mixture.
Mix in chocolate mixture till thick buttery paste forms.
Mix in peppermint extract.
Pour into prepared pan and bake off for 34-36 minutes.
Let cool completely before covering with ganache.
White Chocolate Ganache:
1/2 cup white chocolate chips
2 1/2 tbsp heavy whipping cream
2-3 candy canes, crushed
Method:
In a microwave safe bowl combine both the cream and white chocolate and microwave for 15 second intervals, stirring between each burst. (It took me 45 seconds.)
Spread over brownies, and cover with crushed candy canes.

Ingredients:
2 cups (8 1/2 oz / 240 g) all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks / 8 oz / 227 g) butter, softened
1 1/2 cups (10 1/2 oz / 298 g) sugar
2 eggs, room temperature
2 teaspoons mint extract
3 drops liquid blue food coloring
10 drops liquid green food coloring, more if desired
16 Oreo cookies, chopped
3/4 cup (4 1/2 oz / 128 g) semi-sweet chocolate chips
