How To make Bean& Bacon Soup
2 c Pinto beans (dried)
1 t Salt
1/2 ts Pepper
4 Bacon slices, cut in squares
4 Carrots, chopped
4 Celery stalks, chopped
1/2 ts Thyme (dried)
1 Garlic clove, minced
4 oz Can of tomato paste
2 tb Olive oil
1 Onion, chopped
1 tb Wine vinegar
The approximate cooking time is 3 hours. Cover the washed beans with 6-8 cups of water and bring to a boil. Reduce heat, cover and boil gently for 1 hour and then simmer while still covered. Stir about every 15 minutes for the ENTIRE time the beans are cooking. After the beans have been cooking for about 1 hour and 45 minutes chop the onion and celery and carrots.
Slice the four slices of bacon into 1" squares. Saute the onion, celery and bacon squares in the olive oil for about 10 minutes. Add to the beans along with the thyme, chopped carrots and tomato paste. Simmer uncovered for another hour until the beans are tender and slightly mash the beans. Homemade Bean and Bacon Soup
8 oz. Jones Dairy Farm Cherry Hardwood Smoked Bacon, diced
1 cup diced yellow onions
1 cup diced carrots
1 cup diced celery
2 cloves garlic, minced
4 cups chicken broth
3 cans (15 oz each) Great Northern beans, drained and rinsed
salt and pepper
1 can (8 oz) tomato sauce
Instructions
Cook the bacon in a soup pot or Dutch oven until crisp. Remove with a slotted spoon to a paper towel lined plate. Discard all but about 2 tablespoons of the bacon grease.
To the hot bacon grease, add the onions, carrots and celery. Cook over medium heat until they start to soften, about 5 minutes. Add the garlic and cook an additional minute. Stir in the chicken broth and beans. Season to taste with salt and pepper. Bring to a bubble then reduce the heat to low and let the soup simmer for 1 hour.
Remove half of the soup to a blender or food processor. Process until smooth. Return the puree to the soup pot and stir into the remaining soup. Add the tomato sauce and ¾ of the reserved bacon and stir to combine. Taste and season to taste with salt and pepper. Let the soup simmer until it is heated through, about 5 minutes. Serve topped with the remaining bacon.

Bean with Bacon Soup with Michael's Home Cooking
This hearty Bean with Bacon soup will warm your soul. It's good and the parsley freshens it up. Much better than Campbells.
Ingredients:
1/2 pound navy beans, soaked overnight
5 cups chicken broth
2 Tablespoons butter
1 medium onion (one cup)
2 small cloves of garlic
3 roma tomatoes, chopped with no seeds
1/2 teaspoon marjoram
1/4 pound bacon
salt/pepper/parsley
