How To make Braised Pork Filled Cucumbers
FILLING:
3/4 lb Lean ground pork, or beef
1 tb Soy sauce
1 tb Dry sherry
2 ts Sesame oil
1 ts Sugar
1 ts Cornstarch
SAUCE:
1/3 c Chicken broth
2 tb Soy sauce
2 tb Dry sherry
1 ts Sugar
OTHER, BUT NECESSARY:
2 lg Cucumbers
Cornstarch, for coating 2 ts Cornstarch mixed with 2 ts
-water Preperation: Combine filling ingredients in a bowl; mix well. Set aside for 30 minutes. Combine sauce ingredients in a bowl and set aside. Peel cucumbers if desired. Cut cucumbers crosswise into 1-inch thick sections; remove center of each section. Spoon about 1 level tablespoon of filling into each section. Lightly coat with cornstarch, shaking off excess. Set aside. Cooking: Set wok in a ring stand and add oil to a depth of 1 1/2 to 2 inches. Place over high heat until oil reaches 360 to 375 degrees F. Add cucumber sections, a few at a time, and deep fry for 2 minutes. Lift out and drain on paper towels. Cook remaining cucumber. Place fried cucumber sections in a wide frying pan with a nonstick finish. Pour in sauce and bring to a boil. Reduce heat, cover, and simmer for 8 to 10 minutes. Add corn starch solution and cook, stirring, until sauce boils and thickens. Arrange on a serving platter and serve hot. Serves 4 as a Main dish, but also makes a nice hors d'oeuvre for more.

The Braised Pork Tendon was a recent dish we tried in preparation for Chinese New Year. The pork tendon was brought from market, pre-packed and already soft (possibly processed/pre-cooked before). The cooking duration for this soft pork tendon is only 5 minutes. This dish is quite delicious and easy to prepare. For the shiitake mushroom, these dried mushrooms are pre-soaked in water until it soft (or overnight).

Marinate Pork Ribs 腌排骨:
600g Pork Ribs 600克 排骨
1 tablespoon Light soy sauce 1汤匙 酱青
¼ teaspoon Pepper ¼茶匙 胡椒粉
1 tablespoon HuaDiao wine 1汤匙 花雕酒
Ingredients 配料 :
400g Sea Cucumber 400克 海参
30g Ginger 30克 姜
1 Stalk Spring onion 1克 青葱
HuaDiao wine 花雕酒
6 Garlic 6粒 蒜头
6 Shallot 6粒 葱头
40g Shiitake Mushroom 40克 香菇
Seasonings 调味料 :
1 tablespoon Oyster sauce 1汤匙 蚝油
4 Rock sugar 4粒 冰糖
1 tablespoon Dark soy sauce 1汤匙 酱油
½ teaspoon Pepper ½茶匙 胡椒粉
1 teaspoon Sesame oil 1茶匙 麻油
2) 蒸酱葱鱼 Steamed Spring Onion Ginger Fish
Marinate Fish 腌鱼:

Braised Pig Trotter with Mushrooms 香菇焖猪蹄
Ingredients:
Serves 4 - 6 pax

Blanch the following:

800g pig trotter
A few slices of young ginger
2 tablespoons Chinese cooking wine (Shaoxing Huatiao wine)

Other ingredients

Some cooking oil
1 tablespoon white sugar
1 cup (250ml or 8.45fl oz) water
12 Chinese mushrooms (rehydrated)
2 bulbs garlic
2 bay leaves
1 cinnamon stick
1 star anise
1 teaspoon white peppercorns
1/2 teaspoonSzechuan peppercorns
10g rock sugar (or brown sugar / white sugar)
1 tablespoon salt
2 stalks of spring onion (tied into a knot)
1/4 cup (60ml or 2.03fl oz) light soy sauce
2 cups (500ml or 16.9fl oz) Chinese white rice wine (白米酒)
1/2 cup (125ml or 4.23fl oz) premium dark soy sauce (add more if needed)
Just enough water to cover the pork
Some cornstarch solution
