How To make Butternut Squash Casserole
Ingredients
2 1/2
pound
butternut squash, up to 5 lbs
1
each
carrot, (2 if using more squash)
1
cup
rolled oats
12
oz
green peas
1
tablespoon
butter
2
each
eggs, beaten
1
salt
5
tablespoon
cinnamon sugar
1/2
teaspoon
vanilla
Directions:
Boil squash and carrot together until the carrot is tender. Allow both to cool. Slide skin off carrot. Being careful with squash, remove its seeds and peel. Blend carrots and squash together. Don't over-blend: preserve some texture. Add cinnamon sugar and salt to taste.
Add frothy eggs to carrot/squash mixture. Grease an 8-inch loaf pan. Coat the grease with oatmeal. Mix about 1/2 cup oatmeal into casserole. Gently fold in green peas, then put mixture in casserole pan. Sprinkle remaining oatmeal on top and dot with butter.
Bake at 350 F for 30 to 40 minutes until brown on top.
Once cooked, it can be served immediately or frozen for later consumption.
NOTES: cinnamon sugar is a mixture of sugar and powdered cinnamon.

A roasted butternut squash casserole sweetened with dried fruits and sweet potatoes, complemented by earthiness of brown / wild rice and finished with sweet balsamic notes. It's great as a side dish or as meal during fall or holiday season (for Thanksgiving or Christmas).
Ad-ins: this butternut squash and sweet potato casserole would be even more hearty if you add some nuts, seeds, herbs or even some protein like beans or meat (if you’re not vegan). I even contemplated on adding some apple chunks, they would caramelize beautifully as well.
A CASSEROLE OR BAKE?
A casserole comprises all ingredients together and baked. They often rely on cheese, sour cream or eggs to hold casseroles together and provide creaminess. Since this is a vegan dish, I didn't use any of those and I decided that in this dish the caramelization and texture is more important, and a mushy texture will ruin the flavors.
Some parts are baked, some are boiled, but the final dish is served in a casserole dish and briefly baked at the end. So hence the name, or call it whatever you want, it doesn't really matter when you try it!
If you’re regularly enjoying the sweetness of these root veggies then I hope you won’t mind the addition of cranberries and some maple syrup. If you prefer a more savory dish than opt for savory herbs, nuts, seeds, and maybe some stock – as the liquid for the recipe.

So great to roast up a bunch in the Fall, when butternuts are plentiful and reasonably priced. This butternut squash side dish is also perfect for Thanksgiving and Christmas Dinners. It's a crowd pleaser for sure! Even the kids will love this casserole since it's so sweet and delicious. Bake it up in a single casserole dish for something a little different from the usual sweet potato casserole.

Ingredients for making a casserole with roasted butternut squash:
2 cups of cauliflower cloves
2 cups of butternut squash (cubed)
1/2 cup of diced red onions
1 cup of parmesan cheese
1 tsp sea salt
1 tsp black pepper
1 can of celery soup
Aged cheddar cheese
Instructions for making roasted butternut squash casserole:
- First in a large bowl add your cauliflower cloves
- Then add in your cubed butternut squash
- Followed by adding your diced red onions
- Then pour in your parmesan cheese
- Now season lightly with your sea salt and black pepper
- Then add in your can of celery soup
- Now mix everything in the bowl together
- Add the contents of the bowl into your baking dish
- Top with your aged cheddar cheese
- And bake at 375F or 25 minutes
- Your roasted butternut squash casserole is now ready to eat

BUTTERNUT SQUASH CASSEROLE

Ingredients
1 butternut squash small pieces
1/2 lb chicken
1 cup heavy whipped cream
1 tbsp garlic
4 tbsp cream cheese
4 tbsp sour cream
6 tbsp butter
1 cup cheddar cheese
Salt
Chili Powder
Black Pepper
Chili Flakes
Chili Sauce
Chicken broth (optional)
Directions
Add 1/8 tsp salt, black pepper, chili flakes and chili powder in chicken.
Add little bit of chili Sauce and mix all of them well.
Heat 2 tbsp of butter in separate pan and add 1 tbsp grated garlic.
Sauté garlic for 1 minute.
Add butternut squash and cook for 1 minute
Add salt, chili flakes, chili powder and chili sauce per taste.
Add 1/2 cup water or chicken broth and cook until soften. Add more water if desired.
Separate cooked butternut squash into a bowl.
Add 2 tbsp of butter in the same pan and add chicken.
Cook chicken until tender.
Separate Chicken.
Add 2 tbsp of butter in the same pan.
Add 4 tbsp cream cheese
Add 4 tbsp sour cream
Cook until melted.
Add 1 cup heavy whipped cream.
Add pinch of salt and black pepper
Add half cup of cheddar cheese and cook until thick.
Add first layer of cooked butternut squash in a baking pan.
Second layer of cooked chicken
sprinkle some fresh cilantro and green onion
Add cream layer
Sprinkle cheddar cheese
sprinkle some fresh cilantro and green onion
Bake 450 degrees for 30 to 35 minutes.
Serve after 30-35 minutes.
