Spanish calamari in tomato sauce

You will need:
650g calamari
1 onion
3-4 garlic cloves
2 tbsp tomato puree
400g tomatoes/tomato passata
1 tbsp Spanish spice mix
1 cup olives
pinch of saffron (optional)
parsley
olive oil
salt and black pepper
Tender Stuffed Calamari (Sicilian Style): Baked in a tomato sauce with olives
There’s more to life than fried calamari. This stuffed calamari recipe will have you forget all about it. It’s stuffed with a savory breadcrumb filling and baked in a rich tomato sauce with briny olives. If you are looking for a seafood dish for Christmas Eve or just Friday nights then this is a great one to have in your Italian fish recipe repertoire.
Serves 4 people as a main course
Prep time: 20 minutes
Cook time: 30 to 45 minutes
Ingredients:
8 whole cleaned calamari (with tentacles if possible)
150 grams of stale bread or bread crumbs
1 egg beaten
¼ cup of grated parmesan
1 garlic clove grated
¼ cup of capers
Minced tentacles from the squid
¼ cup of chopped fresh parsley
1 tablespoon of Extra virgin olive oil
250 grams of whole peeled tomatoes in a can
½ cup of olives
Salt and pepper to taste
Preparation:
Preheat an oven to 375°F before preparing the calamari.
Finely mince the tentacles and set them aside. In a bowl, add the breadcrumbs or stale bread, the grated cheese, the capers, fresh parsley, olive oil and then grate a garlic clove into the mixture. Add a beaten egg and combine all the ingredients. If it seems dry then add a little more olive oil.
Using a spoon fill the calamari tubes until they are ¾ filled. Use a toothpick to close the ends. In a baking dish, add the tomatoes and then crush them with a spoon if you are using large tomatoes. If you use cherry tomatoes then leave them whole. Add some salt and pepper and the olives.
Layer the calamari into the dish and then cover with more of the sauce. Place the baking dish in the center of the preheated oven and bake for 30 to 45 minutes or until you can pierce them with a knife easily.
Serve immediately.

Ingredients:
-1 lb. cleaned squid bodies and/or tentacles
-2 cups buttermilk
-1/2 cup all purpose flour
-1/4 cup yellow cornmeal (preferably stone ground)
-1/4 cup corn starch
-2 TS dried oregano
-1 TS fine sea salt
-1/4 TS black pepper
-1/4 TS cayenne
-4 cups peanut oil or light olive oil for frying
-1 pinch of salt
-1 lemon cut into wedges
Directions:
-cut squid bodies into rings of 1/4-1/3 inch width.
-place squid rings and/or tentacles into a bowl and cover with the buttermilk. Refrigerate for 4-6 hours.
-Bring the oil up to 375 degrees f in either a deep fryer or on the stove top.
-Mix together the flour, cornmeal, corn starch, salt, oregano, cayenne, and black pepper in a bowl.
-Drain the squid through a mesh strainer but do not dry completely.
-Working in small batches, coat the squid pieces into the breading mix, then shake them off of excess on a clean strainer.
-In batches, deep fry the squid in the hot oil, fry in small batches and do not cook more than 90 seconds or the calamari can turn rubbery!
-Drain onto a paper towel lined plate.
-Garnish with fresh squeezed lemon and sea salt.
-Serve & enjoy!

Ingredients:
2lb Panamei Squid Rings (Calamari), thawed
½ cup Olive Oil
1 Large Onion, finely chopped
5 Garlic Cloves, lightly crushed
4 Tbsp Tomato Paste
1 Can (14oz) Tomatoes, peeled, and crushed
2 Dry Bay Leaves
6 Fresh Basil leaves, roughly chopped
1 tsp Italian Seasoning
½ Tbsp Sugar
Salt and Pepper, to taste
1 cup White or Sherry Wine
Fresh Parsley, chopped
Instructions:
In a deep pan, heat oil to medium and sauté the onion for about 1 minute; add the garlic and mix well. Add the Italian seasoning, the bay leaves, and the tomato paste (diluted with a Tbsp water). Continue cooking and constantly stirring.
Stir in the crushed tomatoes, sugar, basil, and ½ cup wine; season with salt and pepper and cook in medium-low heat for about 12-15 minutes.
Add the rest of the wine and the Squid Rings (Calamari); cook for 3 minutes and then remove the calamari from the sauce with a slotted spoon, set aside.
Adjust seasoning if needed and continue cooking until it thickens.
Serve the Calamari mixed with the sauce in a large bowl —family style— Garnish with chopped parsley.
Tip: Enjoy this sauce over pasta or with a side of bread. Buon Appetito!
