How To make Caldillo(New Mexican Green Chili Stew
2 lb Lean beef round or pork
2 T Oil
3 ea Medium potatoes, diced
1/2 c Onion, sliced
1 ea Large garlic clove, minced
2 t Salt
6 ea Green chilies
Cube meat, sprinkle with salt and fry until brown in oil. Add potatoes to browned meat together with onion, garlic, salt, chili and enough water to cover. Continue to add water if necessary. It will have a soupy consistency.

3 tomatoes

2 tsp of chicken broth powder
½ cup fresh cilantro
1 gallon of water

This is a delicious and hearty meal we love to eat at home and it is also another one of my mom’s specialties – so she’s gonna oversee me a bit in this video to make sure I cook it just like she does. What I love about this recipe and about Tex-Mex or Mexican recipes in general is that they’re really pretty easy to make if you have a good recipe. Here is what we use:
1 ½ lb Cubed Sirloin
2 Russet Potatoes
½ an onion
⅓ green bell pepper
1 roma tomato
1 bay leaf
2 garlic cloves
2 tbsp of tomato sauce
3c chicken broth
APC OG & Comino to Taste

This classic recipe has just a few simple ingredients but is absolutely delicious. This stew is perfect for any occasion and is sure to be one of your new favorite recipes. Caldito
1/2 pound ground beef
4 medium size potatoes (you can use russet or red)
2 tablespoons flour
1-teaspoon salt
½ cube beef broth, or swap 1-cup water for a 12oz can of beef broth
4 cups water
Directions:
1. Peel potatoes and slice into ¼-inch pieces into a bowl; I use a paring knife and slice according to the edge of the potato, set aside.
2. Brown ground beef until the meat is no longer pink.
3. Add potatoes and cook with beef for approximately 2 minutes.
4. Add flour to beef and potatoes and cook for another 2 minutes.
5. Add water while continually mixing all ingredients to combine.
6. Put ½ cube of beef broth into the mix, and bring to a boil.
7. Once boiling, add salt, mix, turn heat to low, cover and simmer for 30 minutes, or until potatoes are tender.
8. Garnish with chopped cilantro, green onion and green chile*.
* I don’t add green chile initially, because it then becomes a low-grade green chile stew (unless that's what you're going for!)

Green Chili Stew
Today we're sharing our recipe for Homemade Green Chili Stew!
Here's the recipe:
2 lbs. Diced pork
1 Onion diced
3 Cloves garlic minced
10 Pueblo chilies diced
2 c. Stewed Tomatoes
1/3 c. Flour
1/4 c. Oil
1 t. Ground cumin
2 c. Chicken broth
1 c. Water
Salt & Pepper to taste
Using a Dutch oven add oil. Heat on medium high heat. Add pork, stir frequently until lightly browned. Add onion, garlic, cumin, flour, salt and pepper. Mix well. Add Pueblo chili, tomatoes, chicken broth and water, mix well.
Simmer 35 to 40 minutes.
Serving Suggestions:
Enjoy over the stuffed sopapilla's that we featured previously or with fresh pinto beans and tortillas.
PERSONAL NOTE: I puree the chili and tomatoes in a blender because my husband doesn't like big pieces. I use the tomatoes that I can each year and the Pueblo chili we buy at the local farms and freeze. I also make my chicken broth and freeze it.
Nothing like homemade.
