HOW TO MAKE PICADILLO: Easy Recipe with Ground Beef and Hatch Green Chile
If you've ever wanted to learn How to Make Picadillo, then this easy recipe is for you. It starts with ground beef and potatoes, and ends with Hatch green chile. For me, it's the ultimate comfort food. Read on for the recipe, but keep in mind amounts don't have to be exact.
Picadillo
1 lb. ground beef
2-3 potatoes, cubed or sliced
2 roma tomatoes
approx. 6 Hatch green chiles, roasted, peeled & chopped
half an onion, chopped
2 garlic cloves, minced
approx. 2 cups water
1 tsp. chicken bouillon
1 tsp. ground cumin
salt and pepper to taste
Heat a large skillet with enough cooking oil to coat the bottom of the pan, and fry the ground beef in it. When meat is almost cooked, add in the chopped onion and potatoes. Stir and continue cooking a few minutes. Then add in minced garlic, chopped tomatoes, and chopped green chile. Continue to cook a few minutes longer. Add in chicken bouillon, cumin and enough water to just barely cover ingredients in the pan. Mix well and let it come to a boil. Lower the heat, cover, and let simmer until the potatoes are fork tender, approx. 15 minutes. Finally, season with salt and pepper to taste and enjoy!

This classic recipe has just a few simple ingredients but is absolutely delicious. This stew is perfect for any occasion and is sure to be one of your new favorite recipes. Caldito
1/2 pound ground beef
4 medium size potatoes (you can use russet or red)
2 tablespoons flour
1-teaspoon salt
½ cube beef broth, or swap 1-cup water for a 12oz can of beef broth
4 cups water
Directions:
1. Peel potatoes and slice into ¼-inch pieces into a bowl; I use a paring knife and slice according to the edge of the potato, set aside.
2. Brown ground beef until the meat is no longer pink.
3. Add potatoes and cook with beef for approximately 2 minutes.
4. Add flour to beef and potatoes and cook for another 2 minutes.
5. Add water while continually mixing all ingredients to combine.
6. Put ½ cube of beef broth into the mix, and bring to a boil.
7. Once boiling, add salt, mix, turn heat to low, cover and simmer for 30 minutes, or until potatoes are tender.
8. Garnish with chopped cilantro, green onion and green chile*.
* I don’t add green chile initially, because it then becomes a low-grade green chile stew (unless that's what you're going for!)

Mexican Caldo de Res (Cosido)| Beef Soup
Ingredients
5 Liter of Water (20 cups of water or 1 1/2 Gallons)
4-6 Pounds of Beef Soup Bones- Hueso de Res
6 Pounds Beef Chuck Roast- Trozo De Diezmillo de Res
3 Tbs Salt ( Start with 2 Tbs and adjust to taste)
1 Whole Garlic
2-3 Green Onions
1 Anaheim Pepper
3-4 Potatoes
3-4 Carrots
3 Small zucchinis
2 Whole Corns
1-2 Chayotes
20-15 Green Beans
1/2 Cabbage
Optional
Lime or Lemon
Corn Tortilla
White rice
Chiltepin- Pepper Flakes
*Please adjust water measurement to your pot
*If you want a stronger flavored broth, cook your bones for 2 Hrs before adding Beef

3 small / medium green onions (with some green part)

1 Celery rib (slices)
