How To make Carrot Top Soup
1 c Black-eyed peas, soaked
Overnight 1/2 c Dried split peas
1/2 c Pearl barley
3 qt Water
1 T Cold-pressed olive oil (or
Use your favorite fat free Liquid) 1/2 lg Onion, chopped
2 md Carrots, sliced
4 Carrot tops (greens only,
Stems removed, chopped) 1 lg Mustard greens, chopped
1 Leek, sliced
1 c Green beans, broken into
1=D3 sections [sic]
1 lg Potato, unpeeled, diced
1/2 Bay leaf
1/4 ts Thyme
1/4 ts Tarragon
1/4 ts Savory
1 ts Salt
1 ds Pepper
1. In a large pot, place the black-eyed peas, split
peas, pearl barley,=20 and water and simmer until the beans are tender, about 45 minutes. 2. In a skillet heat the olive oil (or other liquid).
Add the onions and saute, covered, 10 minutes or until the onions begin to brown. Turn off the heat under the onions and pour about 1/2 C of the bean cooking water into the skillet and mix well.=20 2. When the beans are cooked, add the onions and all
the other ingredients to the bean pot and cook another 30 minutes, or until the vegetables are tender. Serve

Carrot Top & Nettle Soup - Scrappy Cooking Recipe!
Come make some delicious soup with me! Sometimes one ingredient decides a recipe, then it;s a little of this, a little of that, use what you got and make something amazing.
Carrot tops are usually discarded by many but they are delicious and super nutritious!!
I added some stinging nettles that have been in the fridge and needed to be eaten.
My Recipe for full batch
2 Tablespoons extra virgin olive oil
1 cup sweet onion, chopped
3 garlic cloves, minced
1 cup celery, chopped
1 cup stinging nettles
1/2 cup frozen green peas or a small zucchini
4 cups carrot tops, chopped
1 teaspoon herbs du provence
1/2 teaspoon salt after soup is almost done, to taste
6 cups broth, vegetable or chicken
1/2 cup plant milk, cream or cream cheese

Roasted Carrots with Carrot Top Pesto

Ingredients
12 to 14 medium carrots with tops (about 1 1/2 pounds)
5 to 6 tablespoons extra-virgin olive oil
2 teaspoons sweet curry powder
Kosher salt and freshly ground black pepper
1 tablespoon dark brown sugar
1/2 cup walnut halves
1 cup fresh basil leaves, tightly packed
1 tablespoon honey
2 teaspoons apple cider vinegar
Directions
Preheat the oven to 375 degrees F.
Trim and reserve the carrot tops. In a large bowl, toss the carrots with 2 tablespoons olive oil and the curry powder and salt. Arrange the carrots in a single layer on a baking sheet and roast until tender when pierced with the tip of a knife, 15 to 20 minutes. Sprinkle with the brown sugar and roast 2 to 3 minutes more. Remove and cool.
In the food processor, pulse the walnuts a few times to break them up. Add the basil, carrot tops, honey, 3 tablespoons olive oil, a pinch of salt and 1/4 cup cold water. Pulse until combined but not completely smooth. If dry or too chunky, add another tablespoon olive oil or 1 to 2 tablespoons water to loosen. Transfer to a medium bowl. Taste for seasoning.
Transfer the carrots to a serving platter. Stir the vinegar into the pesto and spoon the pesto over the roasted carrots.
Cook’s Note
Carrot tops are grassy and delicious, but their flavor can vary. Taste them to see if they are more bitter or sweet. Trim the tops, then stem and wash them so you are left with 3/4 cup of the more tender parts. The brown sugar on the carrots and the honey in the pesto are there to offset and balance the basil and carrot tops. This is what I call a nose to tail vegetable preparation. This makes a great appetizer or snack.

Carrot Tops - Benefits, How to eat, and recipes

Carrot Top Pesto:
Ingredients
-2 cups carrot top leaves (you can use some parsley if you don't have enough)
-1/3 cup toasted pine nuts or cashews
-1/3 cup - olive oil
-2 tablespoons freshly squeezed lemon juice
-1 garlic clove
-1/4 teaspoon each: sea salt and pepper
Instructions
1. Place the carrot top pesto ingredients in your food processor or small blender and blend until mostly smooth!
2. Add to your favourite pasta, use it as a dip for veggies, or try on roasted veggies. Yum!

Carrot Green Soup
Carrot green soup is made out of carrot leaves - the part of the vegetable that is usually left out. This soup has thin consistency. It is vegan with enhanced flavors of the herbs used in it.
Carrot greens contain vitamin, alkaloids, chlorophyll, porphyrins and much more. It is a good addition in your detox diet. They also boost your immune systems, improve vision, regulate blood pressure, improve bone density and aid in digestion.
While carrot greens have great health benefits, they also have side-effects especially when consumed in excessive amounts. People with sensitive digestive systems and those who are allergic to parsley and celery should avoid using carrot greens.

85g Carrot green (3 oz)
60g onion, sliced
7g garlic cloves or 2 medium size garlic cloves
½ tsp thyme
½ tsp oregano
½ tsp salt
½ tsp chive
1 ½ tbsp oil

¼ cup almond milk (optional)
3 cups Water
