Mutton Chop Masala | Sanjeev Kapoor Khazana
Mutton lamb chops cooked in spicy onion tomato preparation and served hot.
MUTTON CHOP MASALA - (Serves - 4)
Ingredients
750 grams mutton chops
3-4 tablespoons oil
4-5 cloves
7-8 black peppercorns
3-4 green cardamoms
1 inch cinnamon
3-4 medium onions, sliced
1½ tablespoons ginger-garlic paste
3-4 green chillies, slit
½ teaspoon turmeric powder
1 teaspoon red chilli powder
Juice of 1 lemon
½ cup fresh tomato puree
1 ½ teaspoons garam masala powder
Salt to taste
2 tablespoons chopped fresh mint leaves
½ cup yogurt
Method
1. Heat oil in a non-stick pan. Add cloves, peppercorns, cardamoms and cinnamon and sauté well.
2. Add onion, mix and sauté till translucent. Add mutton chops and mix. Add ginger-garlic paste, mix and sauté well. Cover and cook for 4-5 minutes.
3. Add green chillies, mix, cover and cook for 10-15 minutes. Add turmeric powder, chilli powder and lemon juice and mix well.
4. Add tomato puree, mix well and cook for 2-3 minutes. Add garam masala powder and salt and mix. Add mint leaves and yogurt, mix and cook till fully done.
5. Garnish with coriander leaves and serve hot.

Curd - 5 teaspoon
Clarified butter - 3 tablespoon
Coriander leaves and mint leaves
Almonds - 8
Cashews - 8
Caraway seeds - 1 teaspoon
Cloves - 2
Cardamom - 1
Cinnamon stick - 2
Half a lemon extract
Salt as required

Baked/Grilled Chops
Recipe in English:
Ingredients:
- Mutton Chops 750 gms
- Coriander powder 1 ¼ tsp
- All spice powder 1 ¼ tsp
- Red Chili Powder 1 ¼ tsp
- Salt 1 tsp
- Yogurt 6 tbsp
- Roasted crushed cumin seeds 1 ¼ tsp
- Ginger garlic paste 2 tbsp
- Lemon juice 2 tbsp
- Roasted crushed black pepper 1 ¼ tsp
- Cinnamon powder ½ tsp
Directions:
- Pound the mutton chops
- In a bowl add yogurt and all the other ingredients and mix well. Pour the mixture on chops and mix well
- Leave for marinating 2-3 hours
Grill:
- Add oil and grill chops for 3-4 mins each side or until it’s done.
- Serve with Knorr Tomato Ketchup and Knorr Chili Garlic sauce.
Bake:
- Preheat oven.
- Drizzle oil in a pan, add marinated chops cover with aluminum foil and bake @ 180 degrees for 20-25 mins. Take out pan from oven, flip chops brush with oil/butter and bake without covering in oven for another 10 minutes.
- Serve with Knorr Tomato Ketchup and Knorr Chili Garlic sauce.

Ajza:
- Bakray ki chaanpein 750 to 800 gms
- Dhania Powder 1 ¼ tsp
- Garam Masala powder 1 ¼ tsp
- Lal Mirch powder 1 ¼ tsp
- Namak 1 tsp or to taste
- Dahi 6 tbsp
- Bhuna and kuta zeera 1 ¼ tsp
- Adrak lehsun ka paste 2 tbsp
- Lemon juice 2 tbsp
- Bhuni kuti kali mirch 1 ¼ tsp
- Dar chini ka powder ½ tsp
Directions:
- Chaanpon ko halka sa kut lein
- Bowl main dahi aur baqi tamam ajza ko milein aur is main chaanpein shamil karke haathon se mix karelin.
- 2-3 ghanton ke liye chhor dein.
Grill :
- Grill pe oil daalen, chanpon ko dono side 3-4 minute ya pak jane tak fry kalian.
- Knorr Tomato Ketchup aur Knorr Chili Garlic sauce ke sath serve karain
Bake:
- Oven 180 degrees pe preheat kar lain.
- Baking pan main oil drizzle Karen, chaanpain shamil karke bakia marination daal den. Aluminium foil se cover karke 180 degree pe for 20-25 mins bake karain. Chanpain nikal ke palat den aur dobara 10 minutes bake karlain. Cover na karen.
- Knorr Tomato Ketchup aur Knorr Chili Garlic sauce ke sath serve karain

Ingredients:
-Cooking oil ½ Cup
-Pyaz (Onion) sliced 1 large
-Dahi (Yogurt) 1 Cup
-Paprika powder 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Dhania powder (Coriander powder) 1 tbs
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Garam masala powder 1 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Namak (Salt) 1 tsp or to taste
-Tandoori fried chops masala 1 & ½ tbs
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Hari mirch (Green chilli) crushed 1 tbs
-Lemon juice 1 tbs
-Mutton chops 750g
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Zeera (Cumin seeds) 1 tsp
-Hari elaichi (Green cardamom) 2
-Badi elaichi (Black cardamom) 1
-Sabut kali mirch (Black peppercorns) 12-13
-Laung (Cloves) 3-4
-Water 1 Cup or as required
-Hara dhania (Fresh coriander) chopped
-Adrak (Ginger) julienne
Directions:
-In a wok,add cooking oil,onion and fry until golden brown & set aside.
-In a bowl,add yogurt,paprika powder,turmeric powder,coriander powder,cumin seeds,garam masala powder,red chilli crushed,black pepper powder,salt,tandoori fried chops masala,ginger garlic paste, green chilli,lemon juice and whisk well.
-Add mutton chops,fried onion (crush with the help of hand),fresh coriander and mix well,cover and marinate for 30 minutes.
-In the same wok,heat cooking oil,cumin seeds,green cardamom,black cardamom,black peppercorns,cloves and mix well.
-Now add marinated mutton chops,mix well and cook on medium flame for 12-15 minutes and keep mixing in between.
-Add water and mix well,cover and cook on low flame until tender (40-45 minutes) then cook on high flame until oil separates (2-3 minutes).
-Add fresh coriander and ginger.
-Garnish with onion,ginger & serve!

-Karahi mein cooking oil aur pyaz dal dein aur golden brown hunay tak fry ker lein & side per rakh dein.
-Bowl mein dahi,paprika powder,haldi powder,dhania powder,zeera,garam masala powder,lal mirch crushed,kali mirch powder,namak,tandoori fried chops masala,adrak lehsan paste,hari mirch aur lemon juice dal ker ache tarhan whisk ker lein.
-Mutton chops aur fried pyaz (haath ki madad sa crush ker lein) aur hara dhania dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein.
-Us he karahi mein cooking oil garam karein,zeera,hari elaichi,badi elaichi,sabut kali mirch aur laung dal ker ache tarhan mix karein.
-Ab marinated mutton chops dal ker ache tarhan mix karein aur darmiyani ancch per 12-15 minutes kliya paka lein aur bech bech mein chamcha chalatay rahein.
-Pani dal ker mix karein aur dhak ker halki ancch per gul janay tak paka lein (40-45 minutes) phir tez acch per oil alag ho janay tak paka lein (2-3 minutes).
-Hara dhania aur adrak dal dein.
-Pyaz aur adrak sa garnish ker ka serve karein!
