How To make Chicken Curry Rice Salad
1/2 c Plain yogurt
3 tb Curry powder; divided
1 Garlic clove; minced
1/2 ts Salt
1/4 ts Ground red pepper
4 Chicken breasts
(boneless, skinless) 3 c Cooked rice; cooled
:
(cooked in chicken broth) 1 md Red pepper; julienned
1/2 md Red onion; sliced
1 c Snow peas, julienned
2 Green onions; sliced
1/3 c Raisins
1/4 c Unsalted peanuts, chopped
1/4 c Light Italian dressing
Combine yogurt, 2 tablespoons curry powder, garlic, salt and ground red pepper in medium bowl; mix well. Place chicken in mixture; stir to coat. Cover and marinate 4 to 6 hours in refrigerator. Grill or broil chicken and cut into strips; refrigerate. Combine rice, remaining 1 tablespoon curry powder, red pepper, red onion, snow peas, green onions, raisins and peanuts; mix well. Cover and refrigerate one hour. Pour dressing over salad; toss. To serve, place chicken strips over salad. Healthy & Delicious Chicken Tikka Masala! Low calorie & High protein #shorts #recipe #foodie
Ingredients
Chicken marinade:
• 300g chicken breast cut into cubes
• 1 tsp paprika
• 1 tsp turmeric
• 1 tsp cumin
• 1 tsp garam masala
• 1/2 tsp chilli powder
• 1 tsp salt & pepper
• 4 garlic cloves or 1 tbsp garlic powder
• 100g fat free yogurt
Mix well and marinate for 10 mins or more (the longer the better flavor)
Cook on medium heat for 8 mins till golden brown
Yellow rice:
• 120g uncooked basmati rice (washed)
• 1/2 tsp salt, turmeric & cumin
Tip to make it fluffy: when the rice is 80-90% cooked, drain the water, turn off the heat and cover to let the rice cook in its steam for 5mins
For the sauce & cooking:
• 1 onion finely chopped
• Add 1/2 tsp of the same seasonings used for chicken
• 250g crushed tomatoes (passata)
• 80-100g light cream cheese (brand: Philadelphia) - you can use yogurt or coconut milk instead
Note: you may need to add a little water or passata to add more sauce
- Add cooked chicken, mix and simmer then garnish with coriander
- Serve with 140g of cooked rice per serving
Macros per serving including rice (total 2 servings)
491 calories - 58g protein | 48g carbs | 8g fat
Macros per serving without rice
321 calories - 54g protein | 9g carbs | 8g fat

HOW TO MAKE THE BEST ONE POT CHICKEN RICE
Ingredients:
Chicken Marinate
½ kg boneless chicken
½ tsp salt
2 tbsp plain yogurt
1 tsp ginger paste
1 tsp garlic paste
¼ tsp turmeric
½ tsp red chili
One Pot Preparation
3 tbsp cooking oil
½ cup sliced onion
2 bay leaves
¼ tsp ginger paste
1 ½ cup-soaked basmati rice
1 tsp salt
1 ½ cup hot coconut milk
1 cup hot water
½ tsp garam masala
1 ½ tbsp fresh coriander
1 tsp ghee
Instructions:
1. Mix the chicken pieces with salt, yogurt, ginger paste, garlic paste, turmeric, and red chili
2. Saran wrap and marinate for 15 minutes
3. Place the chicken in a pot with cooking oil and cook until brown for 10-12 minutes on low-medium heat
4. Remove the chicken pieces, add sliced onions, splash of water, bay leaves, ginger paste and rice that has been soaked for 30 minutes
5. Pour hot coconut milk and hot water
6. Place the chicken back into the pot
7. Cook for 10-15 minutes on low-medium heat with the lid on
8. Sprinkle garam masala, chopped coriander leaves, and ghee
9. Give it one last stir before serving
10. Ready to Enjoy!

Easy Curry Rice Salad
Here's a super easy and quick recipe for a sidedish that you can bring to a barbecue or use for meal prepping. Hope you like it!
You need:
1 cup rice
1 bell pepper
1 can or glass of sweet corn
150g sour cream
3 big table spoons of light mayonnaise
salt, pepper to taste
2 teaspoons curry powder
Let it sit for 1-2 hours before enjoying it!
