Thin & Crispy Chocolate Chip Lace Cookies (gluten-free)
These chocolate chip lace cookies are filled with oats and are thin, crispy and melt-in-your-mouth Full recipe at:

1 c. oats
1 c. sugar
1/2 c. melted butter
1 egg
1 t. vanilla
3 t. orange juice
3 T. flour
1/2 t. salt
1/2 bag (5 oz.) chocolate chips
Mix oats, sugar and butter. Stir in egg, vanilla and juice. Add flour and salt. It will be thick. Scoop 1/2 teaspoons onto parchment lined pans and bake at 325 degrees for 8-10 minutes (or until lightly browned on the edges.) Rotate the pan after 5 minutes. Cool for a few minutes on the pan until they are ready to move to a rack to finish cooling. Melt chocolate chips in microwave until smooth (30 seconds at a time.) Spread melted chocolate between two similarly shaped cookies and sandwich.

Ingredients
4 Tablespoons unsalted butter
1/2 cup light brown sugar firmly packed (100g)
1/4 cup granulated sugar 50g
1/4 cup light corn syrup 60ml
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup all-purpose flour 31g
2/3 cup finely chopped almonds¹ 90g
Instructions

00:17 Preheat oven to 350F and line cookie sheet with parchment paper.
00:22 In a medium-sized saucepan, combine butter, sugars, and corn syrup.
00:45 Cook over medium heat, stirring constantly, until sugar has melted and mixture just begins to boil.
01:13 Once boiling, remove from heat and stir in vanilla extract, salt, flour, and finely chopped almonds, stirring until completely combined.
02:18 Allow to cool for five minutes, then drop by 1 ½ teaspoon onto prepared cookie sheet, spacing cookies at least several inches apart (cookies will spread quite a bit in the oven, so give them some space!).
02:57 Bake on 350F for 9 minutes, rotating halfway through baking. You can usually tell the cookies are finished baking when they stop bubbling and are a light golden brown in color. Keep an eye on them because they can burn quickly.

Oatmeal Lace Cookies are such a sweet treat, they are chewy in the center and caramelized crunchy on the outside; they remind me of toffee. If you love browned butter, this is a cookie that you don't want to miss out on! They might be really thin unlike your conventional cookie but they lack nothing. The ingredients are very basic and the method of preparation is quite easy and you happen to get A LOT of cookies out of this simple batter so hopefully you have someone to share them with!

Oatmeal Lace Cookies
1 cup butter
2 1/4 cup brown sugar packed
2 1/4 cup rolled oats
3 Tablespoon flour
1 teaspoon salt
1 teaspoon vanilla
1 egg
Preheat oven to 375 degrees F. Line baking sheets with parchment paper or silicon baking mats.
Brown butter and brown sugar in a saucepan over medium heat, stirring often, until butter has melted and turned brown. Take off heat and stir in oats, flour, salt, vanilla and egg, mixture until everything is incorporated.
Drop cookie batter by the teaspoon onto prepared baking sheets, leaving at least 2 inches between each cookie to allow them to spread.
Bake for 5 -7 minutes, watching closely to prevent them from over-baking. The lace cookies should be golden brown.
Allow to cool on the cookie sheet for 30 seconds and remove onto racks to cool completely.
Store in an airtight container. Enjoy!
