Bableves - Hungarian Bean Soup
This recipe was taught to me by my mother in-law who lives in Hungary, so you know, this is the REAL deal. Bableves or bean soup is a comfort food that can be made easily and with ingredients that are easy to find. For this recipe though, try to find the reddest paprika you can find. I would suggest Penzeys if you cannot find a source for the real thing.
RECIPE:
Bableves:
1 ham hock, smoked
1/2 package or 3/4 package of dried pinto beans (presort and rinse off before using) You can soak them overnight if you want them to cook much faster.
2 bay leaves
pepper (My mother in-law uses pepper corns but I just use generous amounts of ground pepper)
salt (add to taste)
4 carrots or a large handful of baby carrots, cut lengthwise
1 turnip or white carrot (feher repa) Not necessary, but good if you have it.
Thickener:
2 tbsp oil
2-3 tbsp flour
1-2 tbsp paprika (the redder the better)
Csipetke (noodles)
1 egg
1/2- 1 cup flour
1/2 tsp salt

Ingredients:
700 grams of green beans
Water to cover the beans and cook
Salt and pepper to taste
3 TB of sunflower oil
20 grams of all purpose flour
1 bunch of parsley
3 cloves of garlic
1 TB of paprika
1 TB of white vinegar
1/2 cup of sour cream (14% mf)

Cover green beans that have been cut to bite size with water. Simmer for 20-40 minutes to desired tenderness. Add salt. Chop parsley very finely. Create a roux with the sunflower oil and flour: heat oil, add flour and cook for two minutes. Take flour and oil mixture off the heat, add minced/pressed garlic and stir and let cook in the residual heat for 2 minutes. Add paprika and then sour cream to the garlic roux. Mix in some of the soup water into the sour cream mixture and then add roux/sour cream mixture to the cooked green beans and water. Stir and season with salt and pepper. Add parsley and cook for 2 more minutes. Finally add the vinegar and do a final taste test for seasoning and enjoy!
Creamy Hungarian Yellow Bean Stew - Zöldbab főzelék

Today I am making a comfort food called creamy Hungarian Yellow Wax Bean Stew
Zöldbab Főzelék. I got so excited when I find fresh Yellow Wax Bean in our local grocery store. Usually I use frozen or canned green beans, but this time I couldn't resist to make the recipe with fresh yellow wax beans.
Really easy to make, and can be served with Hungarian fried meatball, meat stew (pörkölt) or without any topping. (I will include the links for both recipe under the description), just
Ingredients:
70 dkg yellow wax beans or green beans
1 large Onion (whole)
Bay leaves (used 3 small)
Salt (used 1 1/2 tsp)
1 Tbsp unsalted butter at the end of cooking
Water (Used 6 cups)
for the seasoning at the end, this is how I like mine:
White distilled vinegar (Used 4 Tbsp)
Sugar (4 Tbsp)
For the Roux
6 Tbsp Oil
Flour (used 6 Tbsp)
Sour Cream ( used 5 Tbsp)
Milk ( 150 ml)
For seasoning, I like mine with vinegar and sugar, some like it without sugar depending on your taste.
Just give it a taste and adjust the seasoning the way you like it before the end of cooking.
Tips:
If the bean stew turns out too thick, you can always add a little more milk and adjust the seasoning (salt, sugar, vinegar) To get the right taste using these 3 seasoning is one of the most important step with the stew.
I give a taste so many times before I get the perfect balance.
If you use canned beans with their liquid just make sure the water is only covering the beans.

Green Bean Soup | Sweet & Sour & Creamy

My green bean soup recipe is very easy to follow and it uses just very common ingredients. It cooks in under 60 minutes , from start to finish. Give it a try, I'm pretty sure you will enjoy it.

6 step Hungarian green bean “soup”/főzelék
Today we will show you how to cook a special type of soup, or as we call it, főzelék.
Did I say special? It's so easy to cook, you'll be blown away!
All you need are:
1. green beans (frozen, this time, but you can use the same recipe for fresh),
2. sour cream (3 tablespoons, this is why it's not a vegan recipe),
3. flour (2 tablespoons),
4. salt, or dried vegetable mix, that we call vegeta - available in Polish shops, probably under the brand name Vegeta, or Kucharek (but you don't need to overcomplicate it: use salt, that's easy!)
5. pepper
water
and optionally paprika
1. Put the beans on high heat into a large dish and pour some water in it. (You can use a kettle to make things faster.)
2. Put some salt and pepper, as you like them. Mix them into the beans.
3. Once the water is boiling under the green beans, put them on lower heat. Stir gently.
4. Preparing the thickener: put 3 tablespoons of sour cream in a small bowl. Stir two tablespoons of flour into it and mix them.
5. After 5-8 minutes of cooking, once the beans are easy to break, put the thickener in the beans, and mix them.
6. Stir the mix constantly for five minutes on lower heat. Optionally, you can put some paprika in it at this point.
Then it'll be ready! Enjoy!
You can serve it on its own, with egg, or if you do like some meat, you can put some meat in it! Recommended to have some bread on the side - that's how we traditionally eat this in Hungary!
