INGREDIENTS:
• 4 ounces (113 grams) unsalted butter, softened
• 3 tablespoons (45 grams) fresh rosemary, leaves only, minced
• 2 tablespoons (30 grams) fresh parsley, minced
• 4 tablespoons (60 grams) garlic, minced
• ¾ pound (340 grams) rack of lamb, frenched
• 2 teaspoons (10 millilitres) extra virgin olive oil
• 4 teaspoons (20 grams) kosher salt, plus more as needed
• 3 teaspoons (15 grams) ground black pepper, plus more as needed

Roasted Leg of Lamb
RECIPE:
Roasted Leg of Lamb - This recipe is so good yet it doesn’t require too much time, effort or ingredients. It’s easy & fool-proof, even for you first-timers!
INGREDIENTS:
1 (5 to 6 pound) trimmed bone-in leg of lamb
4 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme leaves
1 tablespoon Dijon mustard
1 tablespoon kosher salt
2 teaspoons ground black pepper
DIRECTIONS:
1. Preheat oven to 350 degrees F. Line a roasting pan with aluminum foil.
2. Pat lamb dry with paper towels. Using a sharp knife, score the top side of the lamb by making shallow cuts all over.
3. In a small bowl, combine garlic, olive oil, rosemary, thyme, Dijon, salt and pepper.
4. Place lamb, fat side up, on a rack in the prepared roasting pan. Spread garlic mixture evenly over the lamb, rubbing in thoroughly into the scored cuts.
5. Place into oven and roast until it reaches an internal temperature of 135 degrees F for medium, about 1 hour 30 minutes to 1 hour 45 minutes, or until desired doneness. Let rest 15 minutes before slicing.
6. Serve immediately with mini hasselback potatoes.
How to Clean a Rack of Lamb with String - CHOW Tip
Janine Falvo, chef de cuisine of Carneros Bistro & Wine Bar in Sonoma, California, cleans a rack of lamb using a piece of string. She ties one end to the sinks faucet (an oven handle would work as well), and then loops the other end around the bone, scraping off the meat and fat with an upward motion.

A great way to save money and time is to buy a rack of lamb that has not been cleaned already by your butcher. The first thing you'll do is remove all the excess fat. Then take a string and anchor it to a stable base in your kitchen, like a faucet or perhaps your oven door. Wrap the string around the bone and pull the fat away from the meat. The string works very well because it not only saves your knife but it also cleans the bone much cleaner than a knife could ever do. Once the bone is clean your lamb will look like a butcher or a chef did it right in your own kitchen.
