These are great cookies that you can either have chewy or crispy, depending on how much you bake them. Nice and buttery.
1 c. Challenge butter
1 c. C&H brown sugar
1 c. C&H granulated sugar
2 eggs
2 c. Bob's Red Mill all purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
2 c. oatmeal
2 c. Rice Krispies
Cream butter and sugars. Add eggs one at a time and mix well. Sift flour, salt, baking powder and baking soda. Add to creamed mixture. Stir in vanilla. Add oatmeal and Rice Krispies. Drop by teaspoonfuls and bake on a greased cookie sheet at 325 degrees for about 15 minutes.

Strawberry Oatmeal Cookies
Ingredients
· 1 cup of rolled oats
· 1 cup of oat flour (To prepare, use 1 cup of rolled oats and blend dry rolled oats until smooth flour texture)
· ½ teaspoon of baking powder
· ¼ teaspoon of salt
· 1 teaspoon of cinnamon
· 1 egg
· 2 tablespoons of coconut oil (melted and cooled)
· 1 teaspoon of vanilla extract
· ¼ cup of maple syrup
· 1 cup of fresh diced strawberries
· 1/3 cup pecan halves (optional)
Instructions
1. Preheat oven to 355F (180C).
2. Prep cookie sheet with parchment paper or aluminum foil (grease with butter).
3. In a bowl, whisk egg, maple syrup, coconut oil, and vanilla extract.
4. Using a separate bowl, mix rolled oats, oat flour, baking powder, salt, cinnamon, and chopped pecans (optional) into a bowl.
5. Mix dry and wet ingredients. Add the diced strawberries at the end.
6. Using a tablespoon, create 12 even balls and shape them and flatten them on to cookie sheet. Each cookie is about 2 tablespoons.
7. Bake for 12-15 minutes.
8. Let cookies cool and enjoy!
