How To make Eggplant Caviar (Prodigy)
3 Eggplants
3 Garlic cloves; minced
1/3 c Olive oil
1 tb Minced parsley
-(or Onion, Basil or - Anchovies) 1 Lemon, juice only
Salt and pepper This makes a dip that is delicious on raw vegetables or spread on French bread, and is good as an appetizer, snack or light lunch. HALVE THE EGGPLANTS LENGTHWISE and place under a broiler, 2 inches from the flame. Broil for 50 minutes, turning once, until very soft. Scoop out the flesh and discard the seed strips. Pass through the coarse blade of a food mill or coarsely mash by hand. Add garlic to taste (be careful, the taste becomes stronger with time). Beat in the olive oil. Melanzane Supreme | Fridge Diving with Meyhem Lauren
LET'S GO FRIDGE DIVING! You've got leftover EGGPLANT but no clue what to do? Turn yesterday's food into today's FEAST. Let's make some Melanzane Supreme aka Eggplant Parmesan.. fresh oregano, fresh basil, fresh garlic, fresh sun-dried tomatoes, everything is fresh in this one!

Ingredients:
- Breaded eggplant
- Garlic
- Tomato
- Crushed tomatoes (28 oz can)
- Basil
- Sea Salt
- Garlic Powder
- Onion Powder
- Oregano (fresh)
- Crushed Red Pepper
- Romano Cheese
- Parmigiano Reggiano
- Ricotta
- Fresh Mozzarella
Directions:
1. Heat up sauce pan and add 2 tablespoons of olive oil with 2-3 crushed garlic cloves. Optional: Add 2 tomatoes, quartered. Add a pinch of sea salt and let sauté on Medium-High, stirring occasionally.
2. Take breaded eggplant and reheat in a fry pan.
3. Add a can of crushed tomatoes to the sauce. Add a touch of Onion & Garlic powder. If you want to add a little heat add Crushed Red Pepper.
4. Chop oregano (fresh) and add to the sauce.
5. Add a few basil leaves.
6. Preheat oven to 400º. Place breaded eggplant in a sheet pan and add dress with the sauce. Top with Romano & Parmigiano Reggiano. Then repeat by layering…sauce, cheese, sauce cheese…you dig? On the top layer finish it off with Ricotta cheese & Mozzarella.
7. Place the sheet pan in the oven for 10-12 minutes, remove, turn to your friends & family and take a bow. Enjoy!
