Luck of the Irish Fortune Cookies
It's that time a year again, time to display your alcoholism as proudly as the shamrock on your lapel, time to imbibe green libations, and inflict flesh wounds upon the non-conformist Mc Scroodges. That's right, it's St. Patricks day! A celebration of all things green, corned, and some dude from Wales, no not Kathrine Zeta Jones. This episode I'm going to teach you how to throw the most Irishtastic St. Patty's day party ever! Erin go bragh!
Green Fortune Cookies
2 large egg whites
1 teaspoon vanilla extract
3 tablespoons vegetable oil
½ cup all-purpose flour
1 1/2 teaspoons cornstarch
1/4 teaspoon salt
1.2 cup granulated sugar
2 teaspoons water
1 teaspoon green food coloring
Preparation:
1. Write fortunes on pieces of paper that are 3 1/2 inches long and 1/2 inch wide. Here's a website with some ideas Preheat oven to 300 degrees Fahrenheit. Grease 2 9-X-13 inch baking sheets.
2. In a medium bowl, lightly beat the egg white, vanilla extract, almond extract and vegetable oil until frothy, but not stiff.
3. Sift the flour, cornstarch, salt and sugar into a separate bowl. Stir the water into the flour mixture.
4. Add the flour into the egg white mixture and stir until you have a smooth batter. The batter should not be runny, but should drop easily off a wooden spoon.
5. Place level tablespoons of batter onto the cookie sheet, spacing them at least 3 inches apart. Smooth with spoon until discs are approx 3 inches in diameter.
6. Bake until the outer 1/2-inch of each cookie turns golden brown and they are easy to remove from the baking sheet with a spatula (14 - 15 minutes).
7. Working quickly, remove the cookie with a spatula and flip it over in your hand. Place a fortune in the middle of a cookie. To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies.
Irish Cream Crème Brulee
I hate to waste stuff so this is a recipe for the 2 leftover egg yolks. I divided the original recipe by 3. So if you want to feed more than two people either divide the portions into tiny ramekins or multiply the recipe by 3 to serve six 4 to serve 8 and so on and so forth. But then what do you do with the leftover egg whites?

Ingredients:
For the Caramel Sauce:
1/2 Cup packed light brown sugar
2 T Unsalted Butter
1/4 cup heavy whipping cream
1 T Vanilla
1 1/2 T light soy sauce
For the Ice Cream
1 can Sweetened Condensed Milk
2 Cups heavy whipping cream
2 Tsp vanilla
10 crushed Fortune Cookies

8 oz of chicken
2 cups of broccoli
1 clove of garlic
1/2 tsp of ginger
3 tsp of cooking oil
2-3 tsp of soy sauce
1 tsp of oyster sauce
1/2 tsp of brown sugar (Option)
3-4 oz of chicken stock
2 tsp of cornstarch dissolved in 2 oz of water
1/2 tsp of sesame oil
Method
1. Heat pan over high heat. Add 1 tsp of cooking oil and stir fry the chicken for 1 minute until chicken semi cooked. Remove it and set aside.
2. Get the pan hot again. Add 2 tsp of cooking oil. Add garlic, ginger and broccoli in and stir fry for 1-2 minutes until the broccoli is bright green color and still crisp.
3. Add chicken back in stir fry and toss for 1-2 minutes. Add sherry cooking wine, soy sauce, oyster sauce, brown sugar, and chicken stock. Bring the sauce to a boil.
4. Add cornstarch mixture in and stir for a minute until the sauce is hot and drizzle sesame oil and Enjoy.

Resurrect the ancient holiday ritual of Wassail this Christmas by whipping up a batch of the traditional drink. Invite friends over and toast to their health, like a king from the Middle Ages.
Step 1: Cut, fill, and bake apples
Cut apples in half and core them, filling each with a teaspoon of brown sugar. Pour 1/8 inch of water in a baking pan and set them in. Bake at 350 degrees Fahrenheit for 30 minutes, until they are softened.
Step 2: Heat the other ingredients
Fill saucepan with the sherry or Madeira, nutmeg, ginger, cloves, allspice berries, cinnamon, sugar, and water. Cook on low heat, not allowing the mixture to boil.
Step 3: Beat eggs
Separate the egg yolks and beat them until light or lemon-colored. Beat the whites until they grow stiff, folding them into the yolks.
Step 4: Strain mixture into eggs
Pour the wine mix through the strainer, adding it slowly to the eggs, stirring continually.
Step 5: Blend brandy
Blend the brandy with the other ingredients to complete the liquid part of the drink.
Step 6: Pour and serve
Pour into a punch bowl, and float apples on the surface. Serve to guests in mugs and toast to good health and good fortune.
