Tomato soup is a favorite of mine and I love all the vegetables and herbs you can add. Top with cheese also. Here is my recipe so that I can use many things from the garden.
Homemade Tomato Soup
8 pounds of ripe red Tomatoes
1 large Garlic Bulb
1 Onion or large Green Onions
1/4 Bunch of Celery
Handful of Basil Fresh
1/2 stick butter
4 cups Chicken Broth
Salt and Pepper to taste
1/4 cup Sugar
Rue: 1/2 stick Butter 1/4 cup Flour

Three-Ingredient Tomato Soup Recipe
(three main ingredients plus add-ons and a few optional enhancers)
Ingredients
• 3-4 Tbsp butter or olive oil
• 1 large white or yellow onion, roughly chopped
• 1 large (28-ounce can) whole tomatoes
• 1 1/2 cups water or broth
• 1/4 teaspoon of sea salt, or more to taste
• 1/4 teaspoon of coarse black pepper (optional)
• 1/4 teaspoon dried basil or oregano (optional)
• 1-2 teaspoons honey or pure maple syrup (optional)
Directions
1. In a stockpot at medium heat, add butter. Let it melt and brown slightly and add your onion. Stir until soft and translucent for ~3-5 mins.
2. Add canned tomatoes & stir. Add broth or water and seasonings. Stir and allow it to simmer (uncovered) for ~30-40 mins.
3. Pour stockpot contents into a blender & process until smooth. Or, use an immersion blender.
4. Serve with crusty bread, warm pita, your favourite crackers, or an epic grilled cheese. I garnished the soup with oat-based cooking creamer and fresh basil. Sumac, olive oil and pesto are also great for garnish and presentation.
