Sweet and Easy Pears with Cream Cheese Tart recipe, cheesecake, pear tart
3 big green pears
2 packs of Cream cheese
½ cup of sugar
3 tsp of vanilla extract
4tbsp of unsalted butter
3 egg yolks
1 pack of ready to bake pie crust
2-4tbsp of sugar to put on top of the pears
2tbsp of butter to brush on top of the pears (optional)
Bake tart covered with foil for 30 min in oven preheated to 375F, than take off the foil and lower the temperature to 300F and bake tar for another 60-75 min. Baking time depends on how juicy your pears are. With less juicy pears the baking time will be much shorter.

Servings: 15-18 tarts

Ingredients
1 large sweet onion, chopped
3 tbsp butter
Salt and freshly cracked pepper
2-3 Bosc pears, diced
1 cup gorgonzola, crumbled
3 tbsp extra-virgin olive oil
3 tbsp fresh thyme,
¼ cup Parmigiano-Reggiano
1 package ready-to-bake tart shells
Balsamic glaze
Method
1. Preheat oven to 375 degrees.
2. Heat butter in a pan over low-medium heat. Add onions and saute, stirring occasionally, until very tender (20-25 min). Season to taste with salt and freshly cracked pepper. Set onions aside.
3. In a large bowl, add pears, gorgonzola, extra-virgin olive oil, fresh thyme, Parmigiano-Reggiano, salt and freshly cracked pepper, to taste. Mix all ingredients with a large spoon.
4. Place tart shells on a baking sheet. Divide the caramelized onions evenly among the tarts. Then divide the pear and Gorgonzola mixture evenly among the tarts.
5. Place in oven at 375 degrees for 30-35 minutes, until shells are golden brown and mixture has set. Drizzle with balsamic glaze and garnish with more fresh thyme.

Ingredients:
4 Ripe Pears, Halfed
1/2 Teaspoon Ground Cinnamon (1.4g)
1/4 Cup Raisins (28.3g)
1/2 Cup Walnuts, Chopped (56g)
Honey
Directions:
1. Rinse, then cut pears in half lengthwise. Remove stems. With a spoon, remove the core with the seeds. Make small slits at the sides of each pear. Place pears on a parchment lined baking sheet with at least 2 inches of space between them.
2. Sprinkle pears with cinnamon. Top each pear with raisins and walnuts. Drizzle with honey. Bake in a preheated oven at 350°F for 30-35 or until softened. Serve warm or at room temperature.
| Makes 8 servings (Half a pear each).

Pear, Walnut and Blue Cheese Crumble| Emeril Lagasse
A crumble is a cooked fruit dessert topped with a crumbly mixture of flour, butter and sugar and baked until crisp and golden brown. Emeril’s version adds a little blue cheese for an unexpected, yet delicious hint of savory richness to a traditional fall fruit crumble.
Pear, Walnut and Blue Cheese Crumble
SERVES 6 TO 8
6 tablespoons chilled unsalted butter, cut into pieces, plus more for baking dish
6 large pears, peeled, cored, and sliced lengthwise
1 tablespoon lemon juice
1/2 cup plus 1 tablespoon all-purpose flour
1/4 cup granulated sugar, plus more if needed
2 tablespoons Ruby Port
Freshly ground black pepper (optional)
1/2 cup finely chopped walnuts
1/4 cup packed light-brown sugar
1/2 teaspoon salt
3/4 cup crumbled blue cheese
Preheat oven to 350 degrees F. Lightly butter a 9-inch shallow baking dish and set
aside.
In a bowl, toss pear slices with lemon juice. Add 1 tablespoon flour, sugar, and port, and
toss to combine. Arrange in prepared dish. Season lightly with pepper. In a bowl,
combine remaining 1/2 cup flour, finely chopped walnuts, brown sugar and salt. Add
butter, working in with your fingertips until it resembles coarse crumbs. Sprinkle over
pear mixture. Bake until pears are tender, juices bubble, and crust is golden, 40 to 45
minutes.
Remove from the oven and sprinkle the cheese over top. Return to oven and bake until
cheese is melted, about 5 minutes. Remove from oven and let sit for 10 minutes before
serving.
