1 1/2 cups unsweetened cocoa powder
sifted PLUS 2 tablespoons unsweetened cocoa powder :
sifted 3 1/4 cups granulated sugar 1 1/3 cups cornstarch 1/2 teaspoon salt In a large bowl, combine all ingredients. Stire with a wire whisk until ev= enly distributed. Pour into a 6 cup container with a tight fitting lid. S= eal container. Label with date and contents. Store in a cool, dry place. = Use with 3-4 months. = Makes about 6 cups Homemade Chocolate Pudding & Pie Filling.

EASY HOMEMADE CHOCOLATE PUDDING (and pie filling)
My kids have requested I post my quick, homemade pudding recipe. A common Sunday Night supper at our house was homemade pudding, served warm. ( I took a chance and served it to my mother-in-law for a Sunday Supper and she was HORRIFIED that we would make a meal of such a thing. But with the no sugar variety and skim milk, it's pretty much a health food. . .truly! In this video, I make a tiny tweak to use part of it as pie filling in a sugar cookie crust. If you want to substitute sucralose for the sugar in the chocolate or vanilla, I'd use about 1/4 teaspoon of pure sucralose powder in place of the sugar. Chocolate Pie. This ain’t how Mom did it
This recipe makes a chocolate cream pie that melts in your mouth. It is easy, quick and tasty. VANILLA PUDDING & PIE FILLING 1 c sugar 4 T flour (or ¼ c corn starch) ½ t salt 2 eggs yokes 2 1/2 c milk 1 t vanilla 2 T butter In medium saucepan mix dry ingredients. Add beaten egg yolks (do not use whites) Add milk Whisk to mix dry and liquid ingredients. Cook over medium heat, stirring constantly, until it begins to boil (being careful to scape all surfaces on sides and bottom of pan). Remove from heat and add butter and vanilla. Mix well, pour into baked pie filling or pudding dishes. Makes an 8” pie FOR CHOCOLATE PIE: Add 3 1/2 T cocoa to dry ingredients FOR COCONUT PIE: Add ¾ cup flaked coconut to cooked vanilla pudding FOR BUTTERSCOTCH PIE: Substitute brown sugar for white BANANA CREAM PIE: Let vanilla pudding cool completely. Slice 1-2 bananas over ½ pudding and cover with the remaining pudding
