How To make Jamaican Rice and Peas
COCONUT MILK:
1 sm Coconut
4 c Water
RICE AND PEAS:
1 cn Red beans
1 md Onion
1 bn Green onions
1 tb Dried thyme leaves
1 ts Ground allspice
2 ea Garlic cloves, minced
1 ts Salt
2 lb Rice
Water Take coconut out of shell and process or grate it in the water, then squeeze it through double-layered cheesecloth. Use only the liquid; throw gratings away. It works better if you let it sit for an hour or so before sieving. Cook the beans in the coconut milk for one hour (simmering). Chop onion and scallions and add with thyme, allspice, garlic, 1 tsp salt and 2 lbs rice. Add water to cover + one inch over top of rice and beans mixture. (use 1st knuckle to guess). Bring to a boil, turn down heat and simmer, covered, 40 minutes or until rice is done.

Authentic Jamaican Rice & Peas Recipe
**Ingredients**
2 Can of Kidney Beans
1 Can Coconut milk, Powder or Cream
Scallion & Thyme
4 cloves chopped garlic
Whole scotch bonnet pepper
Salt to taste
1 tbsp Jerk Seasoning or all purpose seasoning
1 tbsp Sugar (optional )
1 tbsp butter
3 cups Rice
*1 & 1/2 cups of liguid for every 1 cup of rice ratio
*Steam rice on very low heat as cooking too quickly will cause the pot to dry out and the rice will still be uncook
If Rice is uncook after the water dries out, add a bit more water cover with aluminum foil and allow to steam some more

How to make Rice and Peas| Jamaican Style
Ingredients
1 1/2 cups red kidney beans( It’s better to soak the peas overnight). Cook peas for about 1 hour or until tender.
3 cups rice( Use your favorite rice)
2 cups homemade coconut milk( canned is optional)
Roughly 3 1/2 - 5 cups of water to cook peas ( cook peas until tender) Make sure to add enough water to cook peas and adjust where necessary.
1 small onion
4 garlic
3 stalk scallion
Few sprigs of thyme
1 tsp grated ginger
Few pimento berries
All purpose seasoning ( seasoned pot to taste) You can lightly seasoned peas with a pinched of salt or all purpose to cook peas) this will give the peas some taste as they cook and then do a final seasoning once the peas are cook and after adding the coconut milk and fresh seasoning. In addition you can always allow the peas to cook in its natural state with just the garlic, onion and thyme without adding any salt/ seasoning in the beginning and then seasoned to taste once the peas are cook and once you’ve added the remaining fresh seasoning and coconut milk.

Let The Beans Cook For About 45 Mins Or Until They Are Soft.Then Add Coconut Milk Let It Cook For A Lil. Then Add The Rice.This Is A Old School Caribbean Tip. Put A Plastic Bag Over The Rice & Turn The Heat Down Low & Let It Steam. Your Rice Will Come Out Perfect. I Use A Grocery Store Bag , Cut It In Half Use The Side Without The Dye On It And Wash It With Soap & Water Before Putting It Over Your Rice.

Today, I’m making Jamaican-style rice & peas!???? It’s been highly requested! I tried my best to simplify it for those who would love to make it!✨
For the Ingredients, I used:
✨1/2 lb red kidney beans (Goya)
✨1 can coconut milk (Grace)
✨4 cloves of garlic, crushed
✨a few sprigs of fresh thyme
✨3 stalks of scallion, root trimmed & cut in half
✨8 pimento seeds (optional)
✨1 scotch bonnet pepper
✨a sprinkle of garlic salt (Lawry’s)
✨a sprinkle of seasoned salt (Lawry’s)
✨a sprinkle of all purpose seasoning (Goya Abobo)
✨about 3 cups parboiled long grain rice (didn’t measure☹️????)
✨1 tablespoon of butter

• 2 cups water (please check your rice cooker to determine rice/water ratio)
• 4 - 6 tbsp coconut milk powder
• 1 can red kidney beans
• 1/2 tsp salt (to taste)
• 1/2 tsp black pepper
• 1/4 tsp allspice
• 1/2 tsp all-purpose seasoning
• 1/2 tsp ginger powder
• 1 tsp onion powder
• 1 tsp garlic powder
• 1/2 tsp dried thyme leaves
• 1/4 tsp scotch bonnet pepper (to taste)
• 1 clove garlic, crushed
• 1 tsp yellow onion, finely chopped
• 6 pimento seeds
• 1 sprig fresh thyme, chopped
• 1 stalk scallion (green onion) chopped
