How To make Jamaican Rice and Peas
COCONUT MILK:
1 sm Coconut
4 c Water
RICE AND PEAS:
1 cn Red beans
1 md Onion
1 bn Green onions
1 tb Dried thyme leaves
1 ts Ground allspice
2 ea Garlic cloves, minced
1 ts Salt
2 lb Rice
Water Take coconut out of shell and process or grate it in the water, then squeeze it through double-layered cheesecloth. Use only the liquid; throw gratings away. It works better if you let it sit for an hour or so before sieving. Cook the beans in the coconut milk for one hour (simmering). Chop onion and scallions and add with thyme, allspice, garlic, 1 tsp salt and 2 lbs rice. Add water to cover + one inch over top of rice and beans mixture. (use 1st knuckle to guess). Bring to a boil, turn down heat and simmer, covered, 40 minutes or until rice is done.

Ingredients List

2 cups kidney beans soaked for 6-8 hours (overnight is better)
1-2 tsp salt adjust to preference
1 tbsp green seasoning
6 sprigs thyme for boiling beans + 4 later on when adding more seasonings to pot
3 spring onions
1 tbsp all purpose seasoning
2 scotch bonnet peppers
3 garlic cloves - (to boil with beans)
3 cups basmati rice - 4 1/2 cups (water/liquid in pot) - feel free to measure
1/2 can coconut milk/ cream
Important tips to remember
————————————————
* Always cook rice on a 1 cup rice to 1 & 1/2 cup liquid ratio.
* Allow beans to cook before adding any salt or seasonings to the pot as this lengthens the cook time and may cause you to season the pot twice.
* Always go for coconut milk with at least 60-70% coconut content as this will really help with the creamy taste of the rice.
* Cook beans on low heat to prevent water drying up quickly and the beans being undercooked. Steam rice on low heat as cooking too quickly will cause the pot to dry and the rice will still be uncooked.
* You may not master it in one go but practice makes permanent so keep trying even if it’s not perfect the first time around.

HOW TO MAKE RICE AND PEAS
This recipe/video is for Fluffy Rice and Peas using BASMATI Rice.
Suggested Rice Ratios:
- 1 cup LONG GRAIN rice to 2 cups liquid
- 1 cup PARBOILED rice to About 2 1/2 cups liquid
- 1 cup BASMATI rice to About 1 1/2 cup liquid
However we're cooking and extra ingredient along with the rice. (The beans) So aside from the suggested ratio...we need that extra liquid????

Other Recipe notes:
- Using this recipe you'll get tender and fluffy rice. If you prefer moist rice use more liquid.
- Additon of Sugar is optional
- After boiling or pressure cooking the red peas there was about 3 1/2 cups liquid left in the pot. That's enough. Don't add more.
- After you stir in the rice the first time, do not stir again during cooking
