How To make Koorma Vegetable Curry
2 tb Margarine
1 ea Hopped onion
4 ea Garlic cloves
14 oz Can plum tom w liquid, chop
4 oz Can mild chiles drained chop
1 ts Grated ginger, salt, cumin
1 ts Coriander, dry mustard
1/2 ts Turmeric, nutmeg, cinnamon
2 ea Potatoes, peeled and diced
3 c Bite sized cauliflower
2 ea Large carrots
3 tb Chopped fresh cilantro
2 c String beans, 1 in. pieces
1 c Plain low fat yogurt
Heat margarine in wok. Add onion saute until translucent. Add garlic continue until onion golden. Add tomatoes, chiles, ginger, salt and spices. Bring to a simmer, then stir in potatoes, cauliflower, and carrots. Cover and simmer over medium-low heat for 10 min., stirring occasionally, then stir in the cilantro. Simmer for another 20 min over low heat, until vegetables and tender but firm. While cooking, there should be enough liquid to form a sauce; if needed add additional water, but not so much that becomes soupy.Steam string beans separately until bright green and crisp tender. Stir into vegetable mixture. Remove from heat and stir in yogurt. Serve at once.

Melon seeds 10 Grams
Cashew nuts 10 Grams
Poppy seeds 10 Grams
Fried onions 1 Cup
Oil 2 Tablespoons
Cloves 3 Numbers
Cinnamon 1 inch piece 2 Numbers
Bay leaves 2 Numbers
Cardamom 3 Numbers
Cumin seeds 1/2 Teaspoons
Ginger garlic paste 1/2 Teaspoons
Tomato puree 1/4 Cup
Coriander powder 1 Teaspoons
Cumin powder 1/2 Teaspoons
Turmeric 1/4 Teaspoons
Red chilli powder 1/2 Teaspoons
Curd 2-3 Tablespoons
Mint leaves 1/2 Bunch
Mix vegetables (green peas, potatoes, cauliflower, carrot) 1 Cup
Salt To taste
Directions:
Boil almond, melon seeds, cashew nuts and poppy seeds in water. After 15 min transfer it in a mixi jar and grind it with fried onions. Now in a hot oil add whole garam masala- cloves, cinnamon, bay leaves, cardamom, cumin seeds and ginger garlic paste. Mix them well and add tomato puree and blended nuts. Add coriander powder, cumin powder, turmeric, red chilly powder and boil it for few min. Once it comes to boil add curd, mint leaves green peas and boiled vegetables. Mix them properly and add little water. With the lid on let it cook for minutes. When the oil starts floating on top switch off the flame.

Ingredients
Carrot-1(cubed)
Potato-1(cubed)
Peas-1/4cup
Beans-1/2cup(chopped)
Cauliflower florets-1/4cup
Big onion-1/2(finely chopped)
Tomato-1(chopped)
Ginger -small piece
garlic-2 cloves
Fennel seeds-2 pinch
Green chilly-1(chopped)
Chilly powder-1/2tsp
Turmeric powder-1/4tsp
Coriander powder-1tsp
Garam masala-1/4tsp
Salt-to taste
Thick Coconut milk-1/2cup
Curry leaves-few
Coriander leaves-chopped
Mustard seeds-1/4tsp
Method
Pressure cook all the vegetables except peas by adding 1 1/2 of water and salt .
Cook the peas separately . keep them a side.
Heat oil in a kadai and splutter mustard seeds..
Add green chilly and curry leaves ..
Saute for few seconds and add chopped onion , crushed mix of ginger-garlic - fennel seeds and salt …
Saute well till the onion become light brown in colour …
Now add turmeric powder,chilly powder,coriander powder and garam masala .. saute for 1 minute..
Then add chopped tomato ,mix well and close the kadai with a lid for 2 minute…
By this time tomato will be cooked ..Now add the cooked vegetables , mix well …Boil well for 5 minutes
Then add coconut milk ..
No need of boiling after adding coconut milk .. Remove the kadai from the stove
Finely add fresh chopped coriander leaves ..
Close the pan for 2 minutes b4 serving ..
So the very tasty vegetable kurma is ready to serve …. Its a good combination with chapathy,batura ,poori,idiyappam,palappam even with dosa and idly..
Note
If u want u can add cashewnut paste instead of coconut milk…

This is on how to make Veg Kurma / Vegetable Kurma for Chapathi , Parotta or Rotis. This Saravana Bhavan kurma recipe is an excellent side dish recipe for Chapathi. This Vegetable Korma recipe is made in restaurant style, the type of gravy you get in restaurants like the Saravana Bhavan Style. This vegetable gravy has all the goodness of vegetables and is an easy to make recipe at home. This mixed vegetable curry is made in an one pot recipe by cooking all the vegetables in the same pan. I don't boil the vegetables separately add add them because I don't want to waste the nutrients in the water. Hence we will make our curry in the same water. The addition of coconut at the final stage thickens the gravy and brings it to the consistency that can be enjoyed with chapathi or Parotta.
