How To make Lobster with Curry Sauce Bon Appetit
2 (1 3/4 lb) whole live
-lobsters 4 tb (1/2 stick) butter
1 c Chopped onion
1 1/2 tb Curry powder
1 tb Chopped garlic
1 tb Tomato paste
1/4 c Calvados or other apple
-brandy 1 c Dry white wine
3 Fresh thyme sprigs OR
1 ts Dried thyme
3 Fresh parsley sprigs
1 Bay leaf
2 1/2 tb All purpose flour
Bring large pot of water to boil. Add lobsters; cover and boil 9 minutes. Using tongs, transfer lobsters to large bowl of cole water. Reserve 4 cups cooking liquid. Drain lobsters. Working over bowl to collect juices, remove claws and tails. Cut tail meat through shells into 1/2 inch wide medallions. Remove shells. Crack claws; carefully remove meat. Reserve large pieces, reserving all juices and shells. Melt 1 tablespoon butter in heavy large saucepan over medium heat. Add onion, curry and garlic, saute 2 minutes. Stir in tomato juices. Boil mixture 2 minutes. Stir in tomato paste, then Calvados and reserved shells and juices. Boil mixture 2 minutes. Add reserved 4 cups lobster cooking liquid, wine, thyme, parsley and bay leaf; bring to boil. Reduce heat; simmer until sauce is reduced to 1 2/3 cups, about 45 minutes. Strain into medium skillet, discarding solids. (Can be prepared 6 hours ahead. Cover; shill lobster and sauce.) Mix 2 tablespoons butter and flour in small bowl. Bring sauce to simmer. Whisk in butter mixture; boil 2 minutes, whisking constantly. Season with salt and pepper. Melt 1 tablespoon butter in another heavy medium skillet over medium heat. Add lobster medallions and claw meat. Saute just until heated through, about 1 minute. Divide sauce among 4 plates. Arrange medallions and claw meat atop sauce and serve. How to Make Thai Curry with FRESH Lobster
We are back with one of my favorite lobster recipes to follow up on our last episode of us successfully obtaining limits of lobsters on our trip. I thought it would be fitting to show you how to make a great meal with what we caught !
I had traveled to Thailand many times throughout my corporate career (will share the stories with ya’ll sometime in a later episode or a soon-to-come podcast) and while I was there I had the opportunity to eat some really awesome local Thai cuisine. One of my all time favorite places is this restaurant called Somboon Seafood. Their specialty is Thai style curry crab. If you do get to go there, they have another dish with raw marinated crab in a Thai spicy sauce that is to die for! I will show you that one as well on another episode but made also with lobster!
So, when I came home, I had always wanted to make this dish for my family and friends. As YouTube and other social media grew, one day I saw a recipe for Thai Curry Crab and I had a ‘Could’ve had a V8’ moment and a light bulb went off thinking to myself, why don’t I replace the crab with lobster?! Genius!!
Here is the results and it is a show stopper!! The plate gets scrapped off every time with no scraps left! Great to put the sauce on top of rice! It’s a unique dish that not many people think of with lobster and I wanted to share this with you! Everyone enjoys a great curry…especially with lobster!

???? {Thai Curry Lobster} ????
A flavorful blend of Thai spices and ingredients
Ingredients:
(A) 1 2lb Lobster or 2 Dungeness crabs (washed and split)
2 tablespoons vegetable oil
(B) 3 tablespoons curry powder
1 can (14 oz) coconut milk
1 cup chicken or seafood soup
1 tablespoon fish sauce
1 tablespoon sugar
(C) 1 red bell pepper, sliced
1 onion (sliced)
2 green onions
2 cilantro
6 green beans, cut in half
1 piece of celery
6 garlic cloves, finely chopped
Instructions:
1. Prepare the vegetables and herbs: Chop all the vegetables and herbs.
2. Preparing the lobster (crab): Clean the lobster (crab) and remove the shell and gills.
It would be best to ask your fishmonger to do it for you. Dust the lobster with a little potato starch, fry and set aside. * lightly fry lobster do not over fry.
3. Make the curry base: Heat vegetable oil in a large wok or deep pot over medium heat with garlic. Add (B) and mix until crumbly.
4. Return the fried lobster to the simmering curry sauce. Stir over low heat so that the sauce coats the lobster well.
5. Finally, add only the vegetables(red papper, oninon, green beans, celery) and simmer until the vegetables are soft. Finish with herbs(green onions and cilantro).
*Taste the curry and adjust the seasonings if necessary.
You can also add fish sauce, sugar, red curry paste, etc., depending on your preference.
Serve with freshly cooked Thai rice if you have it.
