Lately, it's been all about back pocket recipes. And I feel like everyone should be able to make a really good banana pudding. I've upped the ante with my salted caramel banana pudding. Banoffee pie is one of the best desserts in the world, and I decided to make it in small cute, individual cups, mainly because I had some ingredients left in the kitchen and thought why not make something out of this!! There are layers of digestive biscuit crust, dulce de leche, banana slices and whipped cream, this no-bake “pie” is dangerously delicious and so easy to make! If you’ve never heard of Banoffee Pie, be prepared to discover your new dessert weakness. Banoffee Pie is arguably one of the best British creations, that combines sweet, sliced fresh bananas and clouds of whipped cream that sits on top of a velvety toffee filling, cradled by a crunchy bed of cookie crust. They form a beautiful crunchy contrast with the other ingredients. But feel free to substitute with other cookies or biscuits if you can’t get your hands on them.

Oh the rich, luscious and sweet dulce de leche with the fresh bananas and ever so light whipped cream with a perfect bitter contrast of cocoa power and dark chocolate. Yummm!
You’re going to love this eggless no bake easy dessert.
Let’s get started…
As promised, here is the recipe
350g Digestive biscuits or ginger flavored biscuits
100g Melted butter
Pinch of salt
1 tin or 400g of Condensed milk (made into Dulce de leche)
3 Fresh bananas
500ml Heavy cream
Cocoa powder as needed
Dark chocolate as needed
Instructions to make the Dulce de Leche -
Though it’s takes a while, you’ll see how easy it is.
- The first step is to add a whole tin of milkmaid / condensed milk into a big pot of water
- Bring the water to a boil and simmer for 3.5 hours
- Few very important points to remember. Make sure the tin is completely closed.
- the water level in the pot must ALWAYS be above the tin, otherwise there are chances for the tin to burst open and you do not want to mess with hot caramel.
- While it’s boiling for the 3.5 hours, the water level will keep going down so check on it every half hour and keep adding more water whenever needed.
- After the 3.5 hours, be very careful, drain the water and leave the tin aside until it cools down.
- Only after it cools down, open it and the gorgeous dulce de leche is ready for the Banoffee pie.
You can make this 3 days in advance but I wouldn’t recommend anything more than 3 days because the longer it stays, sugar crystals in the caramel will form and it’s difficult to get rid of them and it’ll make your dulce de leche very grainy.
Instructions for the other ingredients
- In a food processor, blitz the biscuits with a pinch of salt and melted butter until you get a sandy damp texture
- Pour biscuit mixture into your choice of pie dish and press down well
- Place in the fridge for half hour
- Whip heavy cream into soft peaks and keep aside
- Cut bananas into small 1/2 inch circles and keep aside
Final assembly
- On the biscuit base, spread the dulce de leche
- Add bananas on top
- Next add the whipped cream
- Grate some dark chocolate , dust with cocoa powder and it’s ready to be served.
You can serve it immediately or after leaving it in the fridge for a few hours.
If you leave it for too long in the fridge, the dulce de leche will get runny because of the fresh bananas and whipped cream so finish it as soon as you can. I don’t think finishing it quickly is going to be a problem once you have a bite of this deliciousness.

!For the Cream:
1 c heavy cream
1 c whole milk
{or 2 c half/half}
2/3 sugar
