3 lg Onions; coarsely grated
1 lb Minced meat
1 c Parsely; finely chopped
1 c Dill; finely chopped
1 Tomato, grated or
- diluted in 2 tb Butter
1/4 c Rice (short grain)
Salt and pepper to taste 1 c Fresh mint; finely chopped
1/2 c -water
1 tb Tomato paste
1/4 c -cold water

Cajun Rice Dressing
The holidays would not be complete without the Cajun Rice Dressing (Dirty Rice)! Browned meat and seasoning give tons of flavor to rice cooked in all of those flavors!
Ingredients
• 1-1/2 lb. ground pork
• 1-1/2 lb. ground beef
• 2 onions
• 4 stalks celery
• 1 green bell pepper
• 5 cloves garlic
• 1/2 bunch green onions
• 1 container of Savoie's rice dressing mix
• 1 stick butter
• 2 tbsp flour
• 10 cp beef broth
• 3 cups rice
• 1 tbsp Worcestershire
• 2 tbsp beef base
• Creole or Cajun seasoning
• Italian herb blend
• Dried parsley
• Garlic powder
• Onion powder
Directions
1. Brown meat in large pot with a little oil.
2. Add in trinity and cook until soft. Add in garlic and green onions.
3. Add in butter and once melted, stir in flour.
4. Add in rice dressing mix and 10 cups beef stock. Bring up to simmer. Season.
5. Add Worcestershire and beef base.
6. Add in rice and bring up to simmer. Reduce heat to really low and cover. Cook 30 minutes stirring every few minutes to prevent sticking. Uncover and cook another 10 minutes to evaporate liquid and allow rice to soften. I like my dressing a little wet. If you want a drier consistency reduce stock by 1 cup.

How to Make Wild Rice Stuffing

Dried cranberries and nuts add great flavor to this healthy and delicious wild rice stuffing.
Step 1: Saute onions and garlic
Saute the onions and garlic in the butter until tender, about four minutes. Then add the chicken broth and bring it to a boil.
Step 2: Add rice
Add the long grain rice, cover, and simmer for 30 minutes. Then add the brown rice, re-cover, and simmer until most of the liquid is absorbed, about 30 minutes.
Step 3: Add parsley, cranberries, thyme
Add the parsley, cranberries, and the thyme to the rice. Then cover again and cook until all of the liquid is absorbed.
Step 4: Add onions and hazelnuts
Mix in the green onions and hazelnuts.
Tip
Try using pecans instead of hazelnuts.
Step 5: Put into baking dish
Put the stuffing into a baking dish, and cover it with aluminum foil.
Step 6: Place in oven
Place the stuffing in a preheated oven set at 350 degrees Fahrenheit for 40 minutes. Serve the stuffing as a side with turkey or ham.
