How To make Mexican Vegetable Soup
3/4 lb Ground beef
1 pk Lipton Tomato Vegetable Soup
Mix 1 cn (7.5 oz/213 ml)Tomato Sauce
2 c Water
1 cn (14oz/398ml)red kidney beans
1 c Frozen corn niblets
1 1/2 ts Chili Powder
1 ts Oregano
1/2 ts Garlic powder
1/2 c Grated cheddar cheese
1/4 c Dairy sour cream
Nacho Chips In a Dutch oven or heavy medium saucepan, brown ground beef drain fat. Add Soup Mix, tomato sauce, water kidney beans, corn and seasonings; mix well. Bring to a boil, simmer covered 15 minutes. Serve sprinkled with grated cheese and dollop of sour cream. May be accompanied by Nacho Chips Makes 4-5 servings.

The BEST BIRRIA RECIPE-

Cook for 18 -20 minutes
Ingredients
6 to 8 cups water
2 Tbsp olive oil (or oil of choice)
3 Tbsp Chicken bouillon (Knorr natural chicken bouillon)
3 ripe tomatoes
1 small yellow onion
3 garlic cloves
2 Anaheim peppers
3 Potatoes
3 Carrots
2 to 3 Zucchinis
Small bunch cilantro
1 Tbsp Mexican Oregano
Instant pot Sticky rice
In Colorado 1 cup rice to 1 1/2 cups water
Anywhere else 1 cup rice to 1 cup water
1 splash of oil to keep it shiny : )
Tip‼️
If you have home made chicken broth use that instead of chicken bouillon
If using 8 cups water you might need 4 Tbsp Chicken bouillon
If using regular chicken bouillon Start with 2 and adjust to taste
Of you chopped your veggies larger cook for 25-30 mins
Keep this soup handy in your freezer because you never know when it’s your turn to heal mis amores❤️
Adjust bouillon to taste

This is a really simple recipe that taste incredible! 15 minutes of prep and 25 minutes of cooking and its ready!
Ingredients: Yields 8 Portions
1 onion- Chopped
3 Cloves Garlic -Chopped
1 Tablespoon Olive Oil
1 Tablespoon Chili Powder
1 Teaspoon Dried Oregano
1-28 ounce can Crushed Tomatoes
1- 15 ounce Can Black Beans
1 4ounce Can Green Chilis
6 Cups water
3 1/2 Tablespoons of either Chicken or Vegetable Base
1 Cup Frozen Corn Kernels
1/4 Cup Cilantro
Optional- Not for vegetarians- 2 Chicken Breasts -cut into quarter inch pieces
To Garnish: 3 Cups lightly Crushed Tortilla Chips, 8 ounces of either Cheddar or Jack Cheese, and 2 Avocados sliced

Recipe for Chili Bean Soup
Ingredients:
Butter: 1tsp
Cumin seeds: 1/2 tsp
Onion: 1/4 cup
Grated garlic: 1 tbsp
Grated ginger: 1 tsp
All color chopped capsicum: 1/2 cup
Tomato puree: 1/2 cup
Boiled Rajma: 1/4 cup
Mashed boiled rajma: 1/4 cup
Salt per taste
Red chilli powder: 1 tsp
Chilli flakes: 1 tsp
Black pepper powder: 1/2 tsp
Tabasco sauce: 1 tsp
Tomato ketchup: 1 tsp
Water: as required
Method:
1. Heat the oil in a deep saucepan and fry the chopped onion over a medium heat until tender. 2. Add the garlic,ginger,bell pepper and tomato puree, stirring for 1-2 mins until combined.
3. Add beans,salt,red chilli powder,tabasco sauce,tomato ketchup, water and cook it for 5-10 minutes.
4. Now add chilli flakes & bell pepper and mix it well & cook it for 1 minute.
5. Serve hot.

2 1/2 lbs chicken drumsticks
3 1/2 to 3 3/4 quarts water
2 dried bay leaves
1 small onion
6 to 7 cloves garlic
small head of cabbage (chopped)
2 medium potatoes (chopped in large chunks)
1 large Mexican squash (chopped in large chunks)
1 chayote squash
2 medium carrots
1 celery stick
2 green onions
bunch of fresh cilantro (I used parsley)
1/3 cup tomato puree (or tomato sauce)
1 Tbsp chicken bouillon powder
salt and pepper to taste

Mexican Veggie Soup with Tortillas | Homemade in 3 easy steps
MEXICAN VEGGIE SOUP WITH TORTILLAS
Try this super-fresh, home made Mexican style vegetarian soup recipe with 3 easy steps. It's light, quick and packed with flavour.
The perfect light meal and great with some ripe avocado superfood on the side.
MEXICAN VEGETABLE SOUP RECIPE
INGREDIENTS
1 red onion diced
1 red pepper diced
400 gram canned chopped tomatoes
1 tablespoon chipotle chilli sauce
1 Knorr Vegetable Stock Pot dissolved in 300 ml boiling water
100 g frozen sweetcorn
40 g lightly salted tortilla chips
1 tin of kidney beans, strained
METHOD
1 Heat a little oil in a saucepan and fry onion until soft (1-2 minutes). Add pepper and fry a further 1 minutes.
2 Stir in tomatoes, Chipotle sauce, stock and sweetcorn. Simmer for 12-15 minutes.
3 Serve in bowls topped with the tortilla chips, and top with cheese and avocado if used.
Tip. Pour some freshly squeezed lime juice over the avocado to stop is discolouring. It also makes it taste better!
