From Urban Legend to Baking Reality: The Neiman Marcus Cookie Recipe
This week we test the internet's first viral recipe, the Neiman Marcus Cookie. To read more about the cookie see here:
These are hearty cookies that are filled with chocolate chips, chocolate bars, and pecans baked to perfection. Once you try this chocolate chip cookie recipe, it will become your favorite. We fondly call these, Courtney’s Camp Cookies, because a batch followed my daughter to camp every year. They provided a little taste of home and were loved by my daughter and all of her friends. I hope you try these and enjoy them as much as we have over the years.
Preheat oven to 375°
Using a stand mixer, cream together: 2 sticks of butter 1 cup granulated sugar 1 cup packed light brown sugar 2 eggs 1 teaspoon vanilla extract
Sift dry ingredients: 2 cups all purpose flour 1 teaspoon baking powder 1 teaspoon baking soda ½ teaspoon salt
Blend using a food processor or blender - 2 ½ cups oatmeal into a powder consistency. Add blended oatmeal to dry ingredients
Add dry ingredients one spoonful at a time to wet ingredients (in mixer) and blend together on medium speed until well incorporated.
Add - 1-10 oz package of chocolate chips 3 Hershey chocolate bars (broken into pieces) 2 cups chopped pecans
Blend again until all ingredients are well combined.
Line a cookie sheet with a silicone baking mat and place medium sized spoonfuls of cookie dough on the cookie sheet. Bake for 8 minutes. Remove from the oven and allow to cool on the cookie sheet for 5 minutes on a cooling rack. After 5 minutes, transfer cookies from cookie sheet to cooling rack to prevent cookies from continuing to cook and allow to completely cool for 10 minutes.
Recipe will yield 6-7 dozen cookies, depending on the size. Enjoy with a cold glass of milk!
