We sold our house and moved in with our parents last week while we search for our dream home. Working in Mom's kitchen is quite a treat - so much beautiful natural light, not to mention it's huge!!
SALAD INGREDIENTS:
►1 lb Roma tomatoes
►1 English cucumber
►½ medium red onion, sliced
►2 avocados, diced
►2 Tbsp extra virgin olive oil or sunflower oil
►Juice of 1 medium lemon (about 2 Tbsp)
►¼ cup (1/2 bunch) cilantro, chopped
►1 tsp sea salt or ¾ tsp table salt
►⅛ tsp black pepper

Spring is hear and Chef Dylan is in the kitchen teaching us how to make a fresh and easy seafood dish that is uses local seafood and produce while keeping it light. This Shrimp & Cucumber Salad sandwich recipe is a must-try for a week day lunch, party, or quick side dish in a pinch.
Recipe
Ingredients:
For the Shrimp:
2 Lb. Shrimp, Peeled/Deveined/Tail Off/Split
½ Cup Dill, Chopped
½ Onion, Diced
1 Lemon, Halved
2 Tbsp. Garlic, Minced
1 Tbsp. Salt
½ Tbsp. Pepper
For Dressing:
1 Cup Dill, Chopped
1 Tbsp. Garlic, Minced
½ - 1 Cup Mayo (Depending on Taste)
½ Cup Sour Cream
½ Cup Greek Yogurt
1 Cup English Cucumber, Diced
(About 1 Cucumber)
¾ Cup Red Onion, Minced
1 Lemon, Zested
½ Tbsp. Sugar
Pinch of Salt and Pepper to taste
Preparation:
1. Place a sheet pan in the freezer to get cold.
2. In a large pot, add half gallon of water, dill, garlic, onion, whole lemon with juice, salt and pepper. Bring to a boil and then reduce to a simmer until the steam is fragrant.
3. Split the shrimp completely in half. Add the shrimp and turn heat off. Let shrimp cook until opaque.
4. Remove shrimp with a strainer spoon, and place onto the cold sheet pan and return to freezer to rapidly chill. Do not freeze shrimp.
5. To make the dressing, in a large bowl combine the dill, garlic, mayo, sour cream, yogurt, cucumber, onion, lemon zest, sugar, salt and pepper. Whisk to combine completely.
6. Remove the shrimp from the freezer and add to the dressing. Use a spatula to gently fold the shrimp and dressing together.
7. Serve on either lettuce wraps or your favorite bread. Enjoy!
