How To make Quick Veggie Chili Con Queso

tomatoes, canned, crushed

pinto beans, canned

red kidney beans, canned

oz
garbonzo beans, canned

tomato paste
4
oz
chilies, green, canned, diced

each
onions, chopped
2
each
zucchini, sliced
2
tablespoon
chili powder, more or less, to taste
1
teaspoon
cumin
3/4
teaspoon
garlic powder
1/2
teaspoon
sugar
1 1/2
cup
monterey jack cheese, shredded
1
cilantro, for garnish, optional
Directions:
In a dutch oven combine tomatoes, undrained kidney beans, drained garbonzo and pinto beans, tomato paste, undrained chili peppers, onions, zucchini, chili powder, cumin, garlic powder, sugar, salt to taste, if desired. Heat to boiling; reduce heat. Simmer, covered, 30 minutes. Remove from heat. Add cheese; stir till melted.
Serve with sour cream and garnish with cilantro, if desired.

Chile Con Queso
Ingredients:
2 lbs american cheese (you can also use a velveeta block)
½ cup of milk of your choice (I used almond milk)
1 cup homemade salsa
1 cup chopped green chile
Salsa Recipe:
½ medium onion, chopped in large chunks
2 serrano peppers, chopped in large pieces
1 clove garlic, chopped
1 tsp kosher salt
¼ cup cilantro
Juice of ½ of a lime
1 15 oz can of diced tomatoes
Directions for salsa:
1. Combine ½ chopped onion, 2 chopped serrano peppers, ¼ cup cilantro, 1 clove of garlic, 1 tsp salt, the juice of half a lime and ¼ can of tomatoes in a chopper or blender.
2. Pulse until all ingredients are mostly chopped.
3. Add the rest of the tomatoes and pulse until all ingredients are combined.
Directions for Queso:
Prepare salsa and set aside. Chop 2 lb cheese into large chunks and add to a large saucepan on low heat. It is important to keep the heat on low so the cheese doesn’t burn and stick to the bottom of the pan. Once the cheese has started to melt, add ½ cup milk and stir to combine. When the cheese is mostly melted, add 1 cup salsa and 1 cup chopped green chile and continually stir for 15 minutes. Test for any salt needed.

- 2 tbsp unsalted butter
- diced onions
- green & red bell pepper (diced)
- roma tomato (diced)
- 1/2 Jalapeno (deseeded & diced)
- .75 lbs. American cheese - cut into squares *don't use shredded in a bag
- .25 lbs. Colby Jack Cheese - cut into squares *don't use shredded in a bag
- .25 Gouda cheese - cut into squares *don't use shredded in a bag
- 1/2 cup whole milk
- salt/pepper to taste
- 1/2 tsp cumin
- 1/2 tsp oregano
- cilantro (diced)
✤ top with cilantro, tomatoes, pickled jalapenos
