Very Tasty Raspberry Cheesecake Recipe for Beginners
Special Raspberry Cheesecake Recipe
The Spice City recipe for a delicious dessert with cheese and raspberry.
Ingredients:
for the dough:
1 egg white
salt
25g (0.9oz) sugar
rum essence
1 egg yolk
19g (0.7oz) flour
6g (0.2oz) cocoa powder
for the cream:
5g (0.2oz) gelatin
50ml (1.7oz) cold water
30ml (1oz) whipped cream
100g (3.5oz) cream cheese
vanilla essence
25g (0.9oz) sugar
50g (1.7oz) raspberry
To make the dough mix the egg white with salt untill it starts to foam, then add the sugar and mix untill the foam thickens. Add the vanilla essence, the egg yolk, the flour, the cocoa and mix by hand untill the batter is smooth. Pour it into a backing tray and bake for 15 minutes at 180ºC (356ºF).
For the cream: hydrate the gelatin. In the meantime mix the cream cheese with sugar, whipped cream and vanilla essence. Blend the raspberries and give them though a sieve. Add the puree to the cream cheese. Melt the gelatin at bain marie and pour it into the cream. Mix all the ingredients and pour them over the backed dough. Cool the cheesecake for at least 2 hours in the fridge. Good appetite!

Raspberry Cheesecake Recipe Using White Chocolate
Today I am sharing my secret recipe for the most flavorful white chocolate raspberry cheesecake recipe which is always a hit at every dinner party so lets start:
Raspberry Cheese Cake Ingredients:
1+1/2 cups graham cracker crumbs
6 tbsp melted unsalted butter
2+1/4 lb (4.5 8-oz) packages cream cheese (room temperature)
1/2 cup sugar
4 eggs (room temperature)
1/2 cup melted white chocolate
1 tbsp vanilla essence
lemon zest from 1 lemon
1 tbsp lemon juice
2 tbsp all purpose flour
1/2 cup sour cream
1+1/2 cups raspberries (fresh or frozen)
Garnish:
1 cup frozen berries
1/4 cup water
2 tbsp sugar
1 tbsp lemon juice
Raspberry Cheesecake Baking Method:
1. In a bowl, add graham cracker crumbs along with melted butter and mix and then add into the nonstick cake pan and arrange it well and bake it for 8 minutes on a preheated oven of 400F/200C.
2. In a bowl add cream cheese and beat on medium/high speed for 5 minutes until completely smooth, scraping down the bowl twice.
3. Now add sugar and beat for another 5 minutes then slowly and gradually add eggs, one at a time on slow speed, letting them incorporate between each addition and scraping down the bowl as needed.
4. Reduce speed on low and add melted white chocolate and vanilla essence and mix then add lemon zest along with lemon juice, flour and mix for 2 minutes.
5. Now add sour cream and beat for 2 to 4 minutes until mix then add fresh or frozen raspberries and gently fold with spatula.
6. Now pour the prepared batter over the graham cracker crust and bake in a preheated oven of 400F/200C for 10 minutes then reduce the heat to 225f/100C for 1 hour then turn off the oven and let the cheese cake cool down in oven for 1 hour then take it out and let it cool down on a shelf for another hour then wrap it with plastic and refrigerate it overnight.
7. In a pan, add frozen berries along with water, sugar and lemon juice and cook until thick then strain it and let it cool for 20 minutes.
8. Now take out the cheese cake from the fridge and pour the prepared syrup and add 2 cups of fresh raspberries and dust some powdered sugar and enjoy with a nice cup of coffee.

Who doesn't love cheesecake right ? This week, I would like to share an original recipe of my raspberry cheesecake. Just because summer is over doesn't mean we can't use some frozen raspberries and insert a jelly inside a rich and delicious cheesecake filling.
Even though this recipe has a few steps, this raspberry cheesecake is so worth it.
And I have also enclosed an alternative to the glaze to make it easier if you don't have so much time on your hands.
Here are the ingredients :
*Raspberry jelly
140 g raspberries, 1/8 cups
8 g gelatine powder (or 4 gelatine sheets), 3/4 tbsp
48 g water (if using gelatine powder), 1/3 cup
20 g sugar, 2 tbsp
*Crust
100 g icing sugar, 3/4 cup
1/2 tsp vanilla extract
150 g butter, 3/4 cup
2 egg yolks
50 g almond powder (or flour), 1/2 cup
250 g flour, 2 cups
1/2 tsp cardamom
*Cheesecake
300 g cream cheese, 1 1/3 cup
50 g soft butter, 1/4 cup
1/2 tsp vanilla
150 g heavy cream, 3/4 cup
70 g sugar, 1/3 cup
4 g gelatine powder (or 2 gelatine sheets), 1 tsp
24 g water (if using gelatine powder), 1/4 cup
*Mirror Glaze
100 g evaporated milk (or unsweetened condensed milk), 1/3 cup
150 g glucose syrup, 1/2 cup
150 g sugar, 3/4 cup
10 g gelatine (5 sheets approx.)
75 g water, 1/2 cup
150 g white chocolate, 1 cup
