CANDY:
2 c Almond slivers
1 c Sugar
1/3 c Water (or less)
TOPPING:
12 oz Chocolate (can use
-chips, but if they -have a gray bloom, -they might not melt) In a heavy sauce pan, boil almond slivers, sugar and water over low to medium heat until all the water is gone and the sugar crystallizes on the peanuts. Pour almond slivers out onto a well-greased baking sheet. Separate clumps with a greased fork. Bake in a preheated 350 degree F. oven about 15 minutes. Be careful not to burn. Melt chocolate over low heat with constant stirring. When candied almonds have cooled, dip into melted chocolate. Place on foil to set. How to make chocolate truffles with milk at home(Subtitle on)
*I got about 32 chocolate truffles with this recipe.
[Ingredients]
150 g dark couverture chocolate(56%)
150 g milk couverture Chocolate(35%)
(*It can be used as 300g of dark chocolate.)
90 ml full fat milk
40 g(3 Tbsp) unsalted butter
**Compound chocolate doesn't work.Be sure to use couverture chocolate with cocoa butter.
In the case of compound chocolate using vegetable oils such as coconut oil, soybean oil, and palm kernel oil, the ganache does not harden.
Be sure to use couverture chocolate.
** If possible, choose more than 50 percent of the couverture chocolate.
**If you use heavy cream instead of milk, add 150g of cream. In this case, the butter may be 1 tsp or skipped.
[For chocolate coating]
dark chocolate(tempered or compound)
milk chocolate(tempered or compound)
[For decoration]
Dried fruits, nuts, coffee beans, edible gold leaf...
*** If you can consume all the truffles within a week, store them in the refrigerator. Because of the fresh milk, the truffles must be chilled.
Return to room temperature 1 to 2 hours before serving.
If you don't think you'll be able to finish your homemade truffles in a week, i recommend storing them in the freezer.
It can be stored for 2 months in the freezer.
To keep your truffles fresh, seal them in an airtight container. This will prevent refrigerator odors from permeating the delicate chocolate flavor.

Ingredients:
200g good quality Belgium White Chocolate
30 pcs Toast Macadamia Nuts ( alternatively: can use other nuts )
For decoration : 30g white chocolate and 1 tsp beetroot powder. ( optional: 1 drop of pink food coloring)
Note: the same recipe can make Matcha version by adding 1 tsp of Matcha powder in 200g white chocolate. Then for decorating, use 1 tsp Matcha powder instead of beetroot powder
Method:
-Prepare one pot hot water
-Place chocolate in a bowl bigger then the pot size
-Melt chocolate on top of the hot water
-Use silicone spatula to stir the chocolate .
-Using piping bag to fill chocolate into silicone mould or use spoon to fill the mould.
-Fill half of the mould
-Add Macadamia Nuts
-Add the balance of chocolate to fill up with the mould
-Transfer the silicone tray to fridge to firm up for minimum 4 hours
After 4 hours
-Remove chocolate from silicone
-For decoration: added 1 tsp beetroot powder to 30g white chocolate and melted. Sprinkling on top of white chocolate
-Enjoy! Chocolate Covered Macadamia Nuts can serve immediately upon made, or keep in container store at below 10 degree Celsius for up to 30 days
-You can package this as gift for special one at any special occasion

As so many recipes can be made with dark chocolate , white chocolate
easy snacks can be made with minimum ingredients which compete with market snacks
Dark chocolate whenever used in any recipes , we add little sugar powder according to our taste as dark chocolate contains less sugar .Its completly depends upon one's choice
In this recipe i hve not used sugar powder, instead i added some chopped milk chocolate.
