Ukrainian Green Borscht with Sorrel. Borscht. Ukrainian food.
Ingredients:
Broth or water - 3 liters,
potatoes - 600g,
onion - 150g,
carrots - 150g,
beets - 150g,
garlic - 20g,
sorrel - 300g,
sugar salt to taste,
tomato paste - 50g,
eggs - 1 raw, 2 boiled.
Greens (dill, parsley, green onion) - 60g,
Spices to taste (ground black pepper, coriander, spices for meat).
Peel vegetables (potatoes, beets, carrots, onions).
Cut the potatoes into cubes and send to the hot broth.
Grate the beets on a coarse grater.
Grate carrots on a coarse grater.
Onion cut into cubes.
Send potatoes to hot broth. After boiling, remove the foam.
Next, add the beets. Cook until transparent.
Fry onions and carrots.
When the vegetables are browned, add the tomato paste and fry a little.
Add some water so it doesn't burn.
Next, cut the sorrel.
Add the sorrel to the pot and stir.
Then add the fried onions and carrots with tomato paste.
Add spices.
Next, cut the boiled eggs into cubes.
Pour in the egg.
Cut greens (dill, parsley, green onion).
Beat the raw egg and at the end of cooking, while stirring, pour in a thin stream.

Sorrel Soup also known as Green Borscht.
This soup is very popular in Russia, especially in summer time, when you can harvest sorrel. It could be prepared with or without meat. tasty soup with refreshing sour taste, usually served with egg, either mixed or along side.
Sorrel grows in grassland habitats all over Europe and in parts of Central Asia These leaves have an intense lemony tang.It is consumed over the world, including in Romania, Nigeria, Hungry, Russia, India and Vietnam.
Also was found in ancient Egypt.
In this recipe, i will be using preserved in the jar Sorrel:
But, if you fortunate to get fresh one where you live, it would be even better!
SORREL SOUP GREEN BORSCHT
For Beef-Bone broth you will need:
2 lb sirloin meat
2 lb either beef shanks or bones
1 carrot
1 stalk celery
1 onion
2 bay leaves
salt and pepper to taste
dry herbs of your choice.
Make broth as you usually do(as it shown in video)
Take out all vegetables you used for flavoring and discard.
Reserve sirloin to return back to the soup.
You also will need:
2 x (250g) jars of Sorrel
2 medium carrots(pilled and sliced into circles)
1 large onion(finely diced)
4 cloves garlic (minced)
4 small Yukon Gold potatoes (cut into wedges)
1 bunch cilantro
1 bunch parsley
1 bunch dill
2-3 green onions(chopped) for serving
4-5 large eggs
salt and pepper to taste
For serving you will also need: sour cream
For sauteing onion and garlic: you will need couple tablespoons of vegetable oil.

►INGREDIENTS:
3 pork chops cubed
1 onion finely chopped
2 carrots diced
5 potatoes cubed
6 cups sorrel coarsely chopped
1 1/2 teaspoon salt
1/2 teaspoon ground black pepper
12 cups water
5 hard boiled eggs chopped
Sour cream for serving

►DIRECTIONS:
1. In a large pot, add water and pork. Cover and bring to a boil. Reduce heat to low and cook for 20 minutes, removing the foam with mesh strainer a few times.
2. Add onion, carrots, potatoes, salt and pepper. Cover and cook until fork tender, about 15 minutes. In a separate pot, hard boil the eggs.
3. Add sorrel, let wilt for a minute. Add the eggs and stir gently.
4. Serve hot with a generous dollop of sour cream, more chopped eggs and a slice of bread.
