How To make Spicy Roasted Tomato Soup with Herb Salad
4 pounds fresh tomatoes
quartered
10 cloves garlic
1 small carrot :
peeled and finely
-- chopped 2 tablespoons olive oil
salt freshly ground black pepper 1/2 cup minced shallots
2 tablespoons grated fresh horseradish
1/2 cup chopped fresh parsley leaves
3 cups v-8 juice
2 tablespoons worcestershire sauce
2 lemons -- juice of
1 pint yellow tear drop tomatoes
1/2 cup thinly sliced red onions
1/4 cup small fresh basil leaves
1/4 cup small fresh tarragon leaves
1/4 cup small fresh chervil leaves
1/4 cup small fresh flat leaf parsley
drizzle extra-virgin olive oil
1. Preheat the oven to 400 degrees F.
2. On a baking sheet, toss the tomatoes garlic, carrots and olive oil together .
3. Season with salt and pepper. Roast for 15 minutes, or until the tomatoes a re tender. Remove from the oven and cool completely.
4. In a food processor with a metal blade, combine the roasted tomatoes shallo ts, horseradish, and parsley. Puree the mixture until slightly smooth.
5. Add the v-8 juice, Worcestershire sauce, and juice from 2 lemons. Puree un til the mixture is smooth. Season with salt and pepper. Remove the mixture fr om the food processor and chill completely.
6. In a mixing bowl, toss the tear drop tomatoes, red onions, basil, tarragon, chervil, and parsley. Season with a drizzle of the extra-virgin olive oil, sa lt and pepper.
7. To serve, ladle the soup into each bowl. Garnish each soup with the tomato and herb salad.
Yields: 6 to 8 servings.

This is definitely one of my all-time favorite comforting soups.
Pretty soon gardens and farmers' markets will be bursting with vine-ripened tomatoes and peppers...so let's enjoy them!

Grilled Cheese & Roasted Tomato Soup

Fix those late night cravings with some bomb as grilled cheese and spicy tomato soup ???????? here’s my recipe:
6 tomatoes, quartered
1 onion, quartered
1 capsium/ bell pepper, chopped
1 whole garlic bulb
Chilli flakes (optional)
1/2-1 cup unsalted vegetable stock
1/2-1 cup cream
3-4 basil leaves
Salt and pepper
2 slices of your favourite bread
Mozzarella cheese
Cheddar cheese
Butter
Method:
1. Chop off the top of your garlic bulb, leaving the cloves exposed. With your garlic, place all your other chopped vegetables into a large baking dish, drizzle generously with olive oil, chilli flakes, salt and pepper and bake at 200C for 50-60 mins until the vegetables are slightly charred and soft.
2. [optional] Use a blow torch and lightly torch your roasted vegetable to add extra char if you like your soup smokey. Careful not to burn it.
3. Transfer your vegetables into a pot or a blender with your stock, cream and basil. With a stick blender or a normal blender, blend your soup until smooth. Salt and pepper to taste.
4. For your grilled cheese, cut up 2 slices of bread. You can use any cheese you want or have on hand. I used mozzarella for the stretch and cheddar for the bitey taste. Butter your bread and grate as much cheese as your heart can take. Grill in a pan over medium heat until golden brown and cheese melted. Serve with tomato soup.

Ingredients for Gordon Ramsay Tomato Soup-
- 10 Plum Tomatoes (halved)
- 1 White Onion (thinly sliced)
- 2 cloves Garlic
- 2 sprigs Fresh Thyme
- 2 bunches Basil
- 1 quart Vegetable Stock
- 4 tablespoon Olive Oil
- 1 tablespoon Sugar
- 2 teaspoon Paprika/ Cayenne Pepper
- 30 ml Balsamic Vinegar
- Salt and Freshly Ground Black Pepper
- 150 ml Cooking Cream
- 4 cluster Cherry Tomatoes on the vine and Basil Leaves (for topping)
Steps to Make Gordon Ramsay Tomato Soup-
1. In a saucepan, sauté sliced onions, garlic for a while. Add some salt, pepper and paprika to it.
2. Place sliced tomatoes upside down on the same saucepan to get a good char. Add sugar, balsamic vinegar, fresh thyme and basil in the saucepan. Let it cook for around 5 minutes
3. Let it cook for around 5 minutes.
4. Add some vegetable stock to it and mash with the help of a spoon.
5. Now, blend this mixture with a hand blender to get the desired consistency.
6. Top it off with cooking cream for some added flavor.
7. Your tomato soup is ready to gobble.
