How To make Spicy Vegetable Soup with Black Beans
1 md Onion, chopped
4 lg Garlic cloves, minced
1/2 c Red wine, stock, or water
28 oz Can crushed tomatoes
4 c Water or stock
1 Green bell pepper, diced
2 Stalks celery, diced
2 c Sliced okra
2 ts Finely minced fresh ginger
(don't omit ginger) 1 ts Each dried oregano, dried
Thyme, paprika, and ground Cumin 1/4 ts Each black pepper and
Cayenne pepper 1 c Diced zucchini
15 oz Can black beans, with liquid
1 To 2 tablespoons soy sauce
4 c Cooked brown rice
Braise the onion and garlic in wine until onion is soft. Add tomatoes, water, green pepper, celery, okra, ginger, and seasonings; simmer for 15 minutes. Add the diced zucchini and the black beans with their liquid, cover and cook until the zucchini is just tender, about 10 minutes. Add soy sauce to taste. Serve over cooked brown rice. Autumn Vegetable Soup with Black Beans | Quick & Easy 101 Recipes | Autumn Soup Recipe
Welcome To Quick & Easy 101 Recipes
The aroma of our Autumn Vegetable Soup with Black Beans will warm up your body and soul during the fall season. It's the perfect quick fix for those cool fall days when you don't have a lot of time on your hands but you want something hot & hearty, well, this is it! We hope you try this one pot meal and as always, feel free to make it your own by adding additional vegetables and spices to your pot. Create something tasty! ????
INGREDIENTS:
1 pound dried black beans *(soaked)
2 cups sliced carrots (sliced 1/2 inch thick)
2 cups chopped red skin potatoes
3/4 cup chopped onion
2 cups chopped squash
1 cup tomato sauce of any kind
2 cups bell peppers
1 clove minced garlic
1 tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp dried oregano
1 tbsp extra virgin olive oil
salt to taste
INSTRUCTIONS:
Put all the above ingredients into the pressure cooker. Add enough hot water to cover everything about 1 inch above the level of the ingredients. To ensure the soaked beans are tender, cook for 9 minutes once the cooker reaches pressure, reaching pressure can take anywhere from 10-30 minutes depending on how full the pot is.
NOTE: We pre soaked our black beans overnight and pressure cooked them for 9 minutes with quick release. The results were perfect!
If soaking your beans be sure to drain and rinse well before cooking.
*You can also soak your beans 4 hours prior to cooking. We prefer overnight soaking (8 hours) but either way is fine.
It usually takes about 10 minutes for a cooker to reach pressure if it's half full and 20-30 minutes if it's full.
