How To make Swedish Cardamom Braid
2 tb Active Dry Yeast
1/2 c Lukewarm Water (105 to 110
-degrees) 1/2 c Milk, scalded
1/4 c Sugar
1/2 ts Salt
1/4 c Vegetable Oil
1 Egg
3 1/2 To 4 c Flour
1 ts Ground Cardamom
1/2 c Raisins, dark or golden
Combine the yeast and the lukewarm water. Let stand until dissolved. Pour the hot milk over the sugar to dissolve it. Pour the hot milk over the sugar to dissolve it. Add the salt and vegetable oil. Cool. Stir in the yeast mixture, egg, 3 cups of the flour and the cardamom into the sugar mixture. Add the raisins and extra flour. Beat until smooth. Turn the dough onto a lightly-floured surface. Knead until smooth and elastic. Transfer to a lightly-oiled bowl, cover with a damp towel and let rise in a warm place until doubled, about 1 hour. Punch down the dough and transfer to a lightly-floured surface. Divide into thirds. Roll each part into a 10-inch-long strand. Braid loosely. Place on a lightly-oiled baking sheet. Cover and let rise in a warm place until doubled, about 1 hour. Bake in a 350-degree oven for 30 to 35 minutes. Welcome to Box Free with Stephanie, a cooking show on ICTV that features simple and easy recipes that are fresh, nutritious, and delicious and most importantly, box free! This episode features Braided Cardamom Bread.
RECIPE:
Braided Cardamom Bread:
1 egg
2 T butter (room temp)
1/2 c milk
2 c flour
1/3 c sugar
1-1/2 t cardamom
1/4 t salt
1-1/2 t yeast
Topping:
1 egg, beaten
1/4 c sliced almonds
1 T sugar
Combine all bread ingredients in a bread machine, in the order stated. Select “dough” setting. When machine is done, take out dough and knead 2-3 times to get the air out. Separate into 3 equal pieces. Roll each piece on a greased countertop into a long rope about 14” long and 1” thick. Braid the 3 pieces and join the ends together then tuck under the bread. Place on greased pan and let rise for 60 minutes or till doubled in size. Then gently brush with the egg, shake on almonds, and sprinkle on sugar. Bake at 375 for 35-40 minutes until nice and golden. Cool, then slice.
