Kachumber Salad
If you are tired of having lettuce in all your salads, this simple and refreshing salad is a must try. Kachumber salad goes very well with “Daal Chawal”, Rice dishes or with any curry, you can add it to paratha rolls and sandwiches as well. This is such an easy recipe that you don’t have to worry about measurements or anything. Add anything to the quantity you like, season according to your taste and enjoy. This salad add freshness to the overall menu. If you have chat masala at home do not skip it and take my word for it because this is one of these recipes that I have been making most in my life and everyone loved it.
Ingredients:
2 medium Tomatoes
1 medium Cucumber
½ large Onion (or 1 small)
Cilantro (2 tbsp chopped)
Mint (1 tbsp chopped)
lime/lemon ½ medium (or 1 tbsp lime/lemon juice)
Salt and black pepper to taste
½ tsp Chat Masala or to taste
Directions
Chop onion and then add it to a bowl of cold water. This helps reduce the sharp and strong onion flavor. I usually add chopped onion to a bowl of water and place it in freezer for 5-10 minutes. DO NOT forget to take it out on time because it might freeze if you keep it longer than 15-20 minutes. Add a tbsp of vinegar if you want. I do it both ways with or without vinegar.
Dice cucumber and tomatoes. Chop cilantro, mint and green pepper. I used ½ jalapeno and it is quite mild for us. If you are using a hot pepper you can remove the seeds as well.
Cut the lime, use ½ only if it is big or use according to your taste.
Put everything in a bowl, drain onion and add them to the bowl as well. Make sure they are well drained.
Season with chat masala, salt, black pepper and lime/lemon juice, whichever you have available.
Note:
Use vinegar if you don’t have fresh lemon/lime or lemon/lime juice.
You can more vegetables as well, but onion, tomatoes and cucumber is the main ingredient for this.

Cucumber, Tomato & Onion Salad
Here is what you'll need!
Chopped Mediterranean Salad
Servings: 4
INGREDIENTS
2 cucumbers
4 tomatoes
1 red onion
½ cup feta cheese
2 tablespoons olive oil
2 tablespoons red wine vinegar
Salt, to taste
Black pepper, to taste
1 tablespoon lemon juice
1 cup kalamata olives
PREPARATION
1. Cut cucumbers into discs, and then quarter the discs. Place into the bottom of the salad bowl.
2. Cut tomatoes into quarters, lengthwise, and then rotate and cut into large chunks. Place in the salad bowl.
3. Cut the red onion in half, removing the skin, stem, and bottom. Slice into thin strips (julienne), and place in the bowl.
4. Add feta cheese, olive oil, red wine vinegar, salt, pepper, lemon juice, and olives to the salad bowl and toss gently.
5. Enjoy!

1 Sweet Vidalia Onion (cut in half and thinly sliced)
1½ Cups Cherry Tomatoes (cut in half)

½ Cup Cold Water
½ Cup Apple Cider Vinegar
¼ Cup Extra Virgin Olive Oil

Tomato Cucumber Onion Salad
Tomato, cucumber and onion salad is a delicious Summer recipe that pairs well with any type of grilled meat or fish! Join Eric from Simply Elegant Home Cooking as he demonstrates his unique version of this classic salad! There are very keys to making this dish turn out great. Firstly, you want to be sure to buy the best produce you can find! Secondly, you want to season the dish generously and use fresh herbs to really enhance the flavor. The dish comes together dish a delicious homemade vinaigrette.
Ingredients:
-1/2 red onion
-1 seedless cucumber
-12 ounces cherry or grape tomatoes (preferably on the vine)
-1/2 lemon, juiced
-12 leaves fresh basil
-5 sprigs fresh thyme
-1/2 tablespoon red wine vinegar
-1/4 cup extra virgin olive oil
-1/4 teaspoon crushed red pepper flakes
-1 teaspoon dijon mustard
-salt and pepper to taste
Directions:
-Cut the tomatoes in half, using a serrated knife.
-Using a sharp knife, remove the ends of the cucumber. Cut the cucumber into medium sized discs, and then cut each dish into quarters.
-Remove the outer layer of the red onion and remove the core. Then slice the onion as thinly as possible.
-Roll the basil leaves tightly, above 4-5 leaves at a time. Use the sharp knife to slice into thin strips.
-Remove the thyme leaves using your fingertips and then mince them very fine with a knife.
-Combine the lemon juice, red wine vinegar, olive oil, dijon mustard, salt, pepper, and crushed red pepper flakes into a small bowl. Whisk vigorously for several minutes until the vinaigrette has thickened.
-Add the thyme leaves to the vinaigrette and give another quick whisk.
-Combine the cucumber, tomato, and onion into a large bowl. Add in the fresh basil. Pour over a majority of the vinaigrette and carefully stir until well combined. Taste for seasoning, and add more salt and pepper and more of the vinaigrette, if desired.
-Either cool in the fridge, if desired, or serve right away and enjoy!
