How To make Tortilla Soup Two
1 ea Onion, small; chopped
2 ea Garlic clove; pressed
2 tb Oil
1 c Tomato
3 c Chicken stock
1 1/2 c Tomato juice
1 c Water
1 ts Chili powder
1 ts Cumin
Salt; to taste 4 ea Tortilla, corn
1/2 c Cheddar; grated
Calories per serving: 155 Number of Servings: 6 Fat grams per serving: 5 Approx. Cook Time: 1:30 Chop the tomatoes finely. Tear the tortillas into smallish (approx. 1") chunks. In a 3- or 4-quart pan, saute onions and garlic in oil until the onions are translucent. Add tomatoes, chicken stock, tomato juice, and water. Season with chili powder, cumin, and salt to taste. Cover and simmer for 45 to 60 minutes. Just before serving, bring liquid to a boil. Add tortillas and cheese. Cover, remove from heat, and let sit for three to five minutes. I love stuffing the freezer full of high value items like this!
The idea of a soup starter is to preserve what's fresh and in-season by cooking all the veggies... things like tomatoes, peppers, onions, garlic, and sweet corn, into a little flavor-packed stew, and then freezing it. Come meal time, all you need is a bag of soup starter, some broth, chicken, and a can of beans. It's the quickest and yummiest dinner you can imagine, coming together in about 10 minutes and tasting like summertime! You can't beat it.

Tortillas soup recipe
Servings: 4
Toast the chilis
2 guajillos dried peppers -
1 ancho, dried pepper -
Hot water to cover peppers
Fried items
15-20 ea corn tortillas, strips + 1 whole corn tortilla -
2 ea ancho chile, thin strips
Season fried tortilla strips with salt -
The sauce
1 ea white onion, medium
10 oz roma tomatoes
3 ea garlic, cloves
1/2 tsp black peppercorns -
1/2 tsp marjoram, dry -
Fried corn tortilla
1 cup of the chili soaking liquid + rehydrated peppers
6 cups chicken stock, low sodium -
2 bay leafs -
4 sprigs thyme, fresh
1/4 bunch cilantro, fresh
Season the soup at the end, to taste (2 1/2 tsp kosher salt)
Garnish
Fried corn tortillas
Fried Ancho Chile
Mexican style cream or sour cream
Crumbled queso fresco -
Diced avocados
Oil for frying/as needed- Avocado oil -
It is optional but you can add shredded chicken to the soup.
