How To make Hog Head Cheese (Festival)
10 c Water
2 1/2 lb Pork meat
1 Pig's foot
2 t Salt, divided
3/4 lb Onions, chopped
1 T Parsley flakes
1 T Celery flakes
1 c Green onion, chopped
1 t Black pepper
3/4 t Red pepper
Measure water into 5-quart saucepot. Add pork meat, pig's foot, and 1 teaspoon salt. Cook until meat is tender and pig's foot can easily be boned. Approximately 3 cups of liquid should remain in saucepot. Add chopped onions, parsley flakes, celery flakes, chopped green onions, teh remaining teaspoon of salt, black pepper, and red pepper. Cook about 3 minutes. Remove meat from liquid. Reserve liquid. Remove bones from meat. Place meat in food processor bowl. Chop well but do not puree. Mix chopped ingredients and reserved liquid. Pour into 9"x13"x2" pan. Chill thoroughly. Makes 60 servings of 2 Tablespoons each.

Le Boucherie de Mardi Gras at Lake View Park—Making Hogs Head Cheese
A Cajun Boucherie (butchering a pig) was held at Lake View RV Park in Mamou on Mardi Gras. The hog's head is boiled as well as some scrap pork pieces. They made a cracker crust with crushed crackers and butter to line the bottom of the pan (I've never seen this before). An extra head was added to make a big batch. The meat is picked out of the head and and ground and then spices are added and poured into pans to cool and set. It was very cold that day, but the pig's head was hot!

Der berühmte Snack, der die ganze Welt verrückt macht! Kein Ofen, Schweinshaxe Vorspeise!
Kochen Sie einfach die Schweinshaxen und kochen Sie sie in einem Topf und Sie werden das Ergebnis lieben. Gekochte Schweinshaxe ist ein traditionelles deutsches Gericht. Es wird das Hauptgericht auf Ihrem Tisch, denn das Rezept ist sehr lecker und authentisch, Fleischliebhaber werden nicht vorbeikommen, ohne es zu probieren. Kochen Sie mit Freude! Mit Genuss essen!
Kochrezept und Zutaten:
2 Schweinshaxen.
Mit Wasser füllen.
Schaum entfernen.
1 EL Salz.
1 Karotte.
2 Zwiebel
Zugedeckt bei schwacher Hitze 3,5 Stunden garen.
Nach 2,5 Stunden schwarzen Pfeffer hinzufügen.
1 weitere Stunde kochen.
Lorbeerblatt 15 Minuten vor Ende der Garzeit zugeben.
800 g Kartoffeln kochen.
250 g Champignons.
Sonnenblumenöl.
100 g Speck.
1 Zwiebel
1-2 Knoblauchzehen.
Salz und schwarzer Pfeffer nach Geschmack.
Kochen bis weich.
Mach das Feuer aus
1 TL Senf.
80 ml Salzlake aus eingelegten Gurken.
Gekochte Kartoffeln schneiden.
3 eingelegte Gurken
Ein wenig Frühlingszwiebel.
Knochen vom Fleisch entfernen.
Sprich mir nach.
Fügen Sie etwas Petersilie hinzu.
2 Knoblauchzehen hacken.
150 g sonnengetrocknete Tomaten dazugeben.
Salz und schwarzer Pfeffer nach Geschmack.
150 ml Brühe zugeben.
gut mischen
Fest in Frischhaltefolie wickeln.
Mit Dill bestreuen.
Über Nacht in den Kühlschrank stellen.
Unser schmackhaftes Fleisch ist fertig.
Es hat ein wunderbares Aroma.
