How To make Festival Fried Rice
2 sl Bacon; diced
1/3 c Sliced green onions
-- including tops 1/3 c Sliced mushrooms
1/4 c Diced red or green pepper
1/4 c Frozen green peas; thawed
1 Egg; beaten
2 c Cooked rice; chilled
1 tb Soy sauce
Cook bacon in large skillet over medium-low heat until crisp. Increase heat to medium. Add onions, mushrooms, pepper, and peas; stir-fry 1 minute. Push vegetables aside; pour egg into skillet and scramble. Add rice and soy sauce; stir until heated, gently separating grains. Q: I don't have a strong stove. My rice always end up soggy
A: The problem could be one of below ↓
1: Your rice is too wet
Wet rice makes it soggy. So make sure to measure the rice and water properly.
And once it's cooked, it's even better if you freeze it once. You will see it break apart lot easier
2: You didn't heat your pan enough
The most common mistake. Make sure to heat your pan until SMOKING hot.
It's impossible to heat your pan very fast like Chinese restaurants, but if you take your time to heat it, you can make similar environment.
My stove is a $10 cheap one, but I can still cook like a pro????

To Make Marinade
Boneless Chicken - 250 Gms
Soy Sauce - 2 Tsp
Salt
Pepper
To Make Sauce Mixture
Oyster Sauce - 3 Tbsp
Soy Sauce - 2 Tsp
Fish Sauce - 2 Tsp
Sugar - 1 Tsp
To Make Thai Chicken Fried Rice
Jasmine Rice - 1 Bowl
Sauce Mixture
Oil - 1 Tbsp
Garlic - 1 Tbsp
Ginger - 1 Tbsp
Onion - 1 No.
Red Chilli - 2 Nos
Salt
Pepper
Egg - 4 Nos
Basil Leaves
Spring Onion Whites
Spring Onion Greens
Method:
1. Take the boneless chicken pieces in a large bowl.
2. Add salt, pepper and soya sauce. Mix well and keep it aside for 10 mins.
3. In another bowl, take oyster sauce, soya sauce, fish sauce and sugar. Mix well and keep it aside.
4. Take a wok and pour some oil in it.
5. Drop in the chopped garlic and ginger. Saute for a minute and add the onion slices.
6. Next add the red chillies and saute until the onions are transparent.
7. Now put the marinated chicken pieces and fry them on a medium high flame until they are no more pink and nicely cooked.
8. Add in some salt and pepper. Give it a quick mix and move it all towards one side in the wok.
9. Add oil to the other side space in the wok and then put in the beaten eggs mixture.
10. Cook it for a while and then mix it along with the chicken pieces.
11. Once the eggs and chicken are cooked, add in the cooked Jasmine rice.
12. Then pour the prepare sauce mixture. Give it all a quick mix.
13. Add the fresh basil leaves, chopped spring onion whites and chopped spring onion greens.
14. Mix well and turn off the stove.
15. To a small pan, add oil and drop in a cracked egg. Sprinkle some salt and pepper.
16. Cook it on both sides.
17. Now transfer the Thai Fried Rice to a serving plate and then garnish it with the fried egg. Serve it hot.
