INCREDIBLE Masala Fried Rice Recipe

LAY HO MA!! Alright, you have got to try this fried rice recipe. It is incredibly packed with flavour and of course, easy to make. Join me in this episode and learn how to cook an amazing masala fried rice recipe. Let's begin.
Servings - 1
Ingredients:
1/2 red onion
2 roma tomatoes
3 long green chilies
3 tbsp olive oil
2 pinches of salt
1/4 cup curry leaves
1/2 tsp chili powder (cayenne)
1 tbsp sweet paprika
2 tsp garam masala
1 1/2 cups leftover basmati rice
few sprigs cilantro
couple lime wedges
Directions:
1. Dice the red onion and tomatoes. Chop the chilies
2. Bring a non stick pan to medium heat. Add the olive oil
3. Sauté the onions and chilies for about a minute
4. Add in the tomatoes followed by a couple pinches of salt. Sauté for a few minutes
5. Add in the curry leaves and sauté for 4-5min
6. Add in the chili powder, paprika, and garam masala (add a couple splashes of water if it looks too dry)
7. Add in the rice and sauté for another couple of minutes
8. Garnish with freshly chopped cilantro and serve with a couple wedges of lime

This chicken fried rice recipe takes 15 minutes to make. It's absolutely delicious and everybody loves it- no doubt about that. Sometimes maybe you don’t know what to cook for dinner, this is it! It is better than your local take out fried rice AND healthier.

**INGREDIENTS FOR THE CHICKEN FRIED RICE [serve 1-2]**
**For the chicken marinade**
- 150 grams of chicken
- 1 tsp of corn starch
- 1 tsp of soy sauce
- 1 tsp of vegetable oil
- a pinch of baking soda(NOT BAKING POWDER Sorry for the audio mistake in the video)
**FOR THE STIR FRYING**
- 2 eggs
- 3 tbsp oil
- 2 cups of cooked rice
- 1 tbsp of minced garlic
- 1/4 cup of red onion
- 1/3 cup of green beans
- 1/2 cup of carrot
- 1/4 cup of spring onion
**FOR THE SEASONING**
- 1 tbsp of light soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce:
- 2 tsp of dark soy sauce [Pearl River Bridge Superior Dark Soy Sauce:
- 1/4 tsp of salt or to taste
- pepper to taste
**HOW TO MAKE CHICKEN FRIED RICE**
- Cut the chicken into small pieces. Mix it with 1 tsp of corn starch, 1 tsp of soy sauce, 1 tsp of vegetable oil and a pinch of baking soda. Set it aside for 30 minutes.
- Crack 2 eggs. Beat it well.
- Heat up the wok. Add about 1 tbsp of vegetable oil. Give it a toss, so the bottom is coated nicely.
- Wait until there is smoke coming out. Pour in the egg. Will take about 30-50 seconds to get the it fluffy. Break it into small pieces and set it aside.
- Add more oil into the same wok. Heat it up and add in the chicken. Saute it about 1 or 2 minutes. Then push it to the side so you have room for the vegetables. Dump in all your veggies, which are 1 tbsp of minced garlic, 1/4 cup of onion, 1/3 cup of green beans and 1/2 cup of carrot. Stir-fry for 2 to 3 minutes.
- When the onion should be transparent, Add some salt to taste. Mix it well.
- Take it out.
- Next is the rice. Loosen up the rice before frying.
- Turn on the gas to high, Heat up the wok for about 15 seconds. Then add 2 tbsp of vegetable oil. Put in the rice right after that. Use your spatula to break down the big pieces.
- You need to stir fry this for 3-5 minutes. Then add in our seasoning, 1 tbsp of light soy sauce, 2 tsp of dark soy sauce.
- Now you really got to mix this. Do it fast. Because the wok is hot, the liquid will evaporate quickly- then you will never get to mix it evenly. Once can not see white rice, add in all the ingredients. Veggies, meat, oh and the egg...
- Toss everything together. Give them about 2 minutes to be infused with each other.
- Add in the spring onion right before serving.

LAY HO MA!! Two things I absolutely love come together - coconut and curry (well...and fried rice!). There is so much flavour and lovely textures in this easy recipe, you'll want to make it all the time! Join me in this episode and learn how to make a vegan coconut curry fried rice recipe. Let's begin.
Servings - 1-2
Ingredients:
3 pieces garlic
1/2 red onion
1/2 red bell pepper
70g broccolini
1 cup shredded coconut
2 tbsp chili oil (
1/2 cup chickpeas
1/4 roasted peanuts
1 1/2 cups leftover rice
1 tbsp curry powder*
2 tbsp soy sauce
Directions:
1. Roughly chop the garlic, dice the red onion and bell pepper, and chop the broccolini
2. Heat up a non stick pan to medium heat. Toast the shredded coconut for 1-2min, then set aside
3. Wipe out the pan with a paper towel and place it back onto medium heat
4. Add in the chili oil followed by the red onions and garlic. Sauté for 2min
5. Add in the chickpeas, broccolini, and red bell pepper. Sauté for 2-3min
6. Add in the peanuts, rice, curry powder, and soy sauce
7. Sauté for another 2-3min. Then, add in 2/3 of the toasted coconut and save the rest for garnish
8. Give the rice a stir around and plate. Garnish with the remaining toasted coconut and serve
*I purchase a curry powder that is pre-blended with turmeric, coriander, cumin, ginger, cinnamon, black pepper, fenugreek, cayenne, mustard, cardamon

Egg fried rice is an easy dish, but most people (and even restaurants) don’t do a good job. It’s usually too oily, heavy or salty. This recipe has an amazing balance of flavor while remaining light. Learn how to prepare egg fried rice, the right way!

**INGREDIENTS**
**FOR PRECOOK**
- 4 egg whites [4个鸡蛋清]
- 1/4 cup of green peas [1/4杯豌豆]
- 1/4 cup of carrot cubes [1/4杯萝卜丁]
- 1/2 cup of cabbage [1/2杯白菜]
- 1 tbsp of vegetable oil [1汤匙植物油]
- 1/4 tsp of salt or to taste [1/4茶匙盐或者根据个人口味调整]
**FOR FRYING THE RICE**
- 4 egg yolks [4个蛋黄]
- 2 tbsp of vegetable oil [2汤匙植物油]
- 2 cups of cooked rice [2杯米饭]
- 1 tbsp of rose wine [1汤匙玫瑰露酒]
[Rose wine recommend:
- 1/2 tsp of salt or to taste [1/2茶匙盐]
- 1/2 tsp of black pepper [1/2茶匙黑胡椒]
**STEPS**
- Heat up your wok. Add the oil and egg whites. Egg white is really easy to stick to the wok, it is better to use a non-stick wok.
- Add all the vegetable. Stir it for 1 or 2 minutes.
- Add 1/4 tsp salt, give it a mix and set it aside.
- Mix the rice with egg yolks until you don’t see white rice.
- Heat your wok to high temperature and then turn the heat to medium.Put 2 tbsp of cold vegetable oil and add in the rice immediately. (This is a little trick to help the rice not to stick to the bottom since I don’t have a non-stick wok.)
- Use your spatula to break down the big piece, so the rice cook evenly.
- After a few minutes stirring, you can smell the egg, also you can see that your rice is popping. That means you are doing correctly.
- I like to put a tbsp of rose wine. It is optional. I really like the rose fragrance mixed with egg fried rice. Smells so good. And also it makes the rice a little soft.
- Mix it with the vegetables.
- Add half tsp of salt and ground pepper to taste. Give it a mix and you are done.

Easy Vegetable Fried Rice Recipe
How to make simple and satisfying veggie fried rice. I love to make this whenever I need to clear out the fridge, have day old rice or don't know what I want to have for lunch because this is fast, easy and delicious!

Ingredients:
1 medium chopped vidalia/yellow onion
3 cloves minced or thinly sliced garlic
2 tb unsalted butter or sesame oil {the latter for smokier depth}
1 c mixed vegetables {or your choice of veggies}
2 c room temperature day old rice
1 tb soy
1 tb fish sauce* or an extra tablespoon of liquid aminos, tamari, etc.
Garnish: scallion and sesame seeds
Optional: eggs, crispy tofu, etc.
Instructions:
Add butter or sesame oil to a pan over medium. When it begins to shimmer, add your onion and cook until it browns.
Mix in your garlic until it warms through then add in your veggies.
Add your rice, soy and fish sauce. Cook until the rice is hot. Add freshly cracked pepper, if desired.
Plate and garnish with chopped scallions and sesame seeds.
