A Tropical Twist on Banana Bread: Pineapple Banana Bread
Hey everyone!
In this video, I'm making pineapple banana bread, otherwise known as Hummingbird Bread. This easy and tasty bread is super moist and loaded with flavors of pineapple, banana and a hint of cinnamon.
It's super easy to make with just a few simple ingredients and takes no time at all, so you won't be spending a lot of time in the kitchen.
This bread is sure to be a hit with its moist texture and delicious combination of pineapple and banana flavors. If you're a fan of banana bread, you'll love this tropical twist. You'll love the combination of sweet bananas and tangy pineapple in every bite.

‘Ohana Pineapple-Coconut Bread - Disney's Polynesian Village Resort
This breakfast bread can and should be eaten for breakfast, but it makes enough to turn some of it into the famous ‘Ohana Bread Pudding. You are going to want to do that. I promise. Reserve 8 cups of bread cut up into small cubes. And follow my ‘Ohana Bread Pudding video/recipe (will be posted soon). If you want regular, not very spectacular bread pudding, use any old bread. You can find examples of this all over YouTube. Be a superhero in your own kitchen and make this bread first…then go for the amazing pudding. Oh, did I say it comes with caramel banana sauce? ????
Yield 1 – 9” x 13” pan (glass or metal)
Bread Ingredients:
1 3/4 C. Water
1 Egg Yolk
2 T. Shortening
4 1/2 C. High Gluten Flour (bread flour/strong flour)
1/2 tsp. Salt
1/3 C. Sugar
1 T. Instant Yeast
Coconut Mixture Ingredients:
1 C. Crushed pineapple, well drained and patted dry
1 C. Unsweetened dried shredded coconut
1 C. Sugar
2 T. Cornstarch
Sweet Glaze Ingredients:
Scant ½ C. (50 grams) powdered sugar
4 tsp. water
Pineapple/Coconut Instructions:
1. Combine pineapple and coconut in bowl.
2. Combine sugar and cornstarch in separate bowl and mix well.
3. Add sugar and cornstarch mixture into pineapple and coconut mixture and mix well.
4. Refrigerate for 1 hour.
Bread Instructions:
1. Combine all ingredients in order of recipe in mixing bowl, and mix with dough hook until dough picks up on hook and the sides of the mixing bowl is clean, or mix with hands like I do.
2. Let dough rise until it doubles in size. (Mine rose a bit too much.)
It's easy to see when it doubles in size (if you look) with this:
3. Roll out dough onto a floured surface until it is about 1/2 inch thick.
4. Next spread pineapple/coconut mixture over the top of the dough.
5. Roll dough up like a jelly roll, capturing the pineapple and coconut mixture inside.
6. Cut dough into pieces with a knife and make into balls to contain the fruit mixture. See video.
7. Place in greased/sprayed pan.
8. Let dough rise in warm place until poufy like rolls should be. About ½ an hour. I put in proofer at 90F.
9. Bake at 325F degrees for 20-45 minutes, depending on type of pan and calibration of your oven, or until golden brown. Get your oven calibrated. I need to!
10. Brush on powdered sugar/water glaze that has been well mixed in a small bowl.
11. Let bread cool a tiny bit, turn out onto cutting board or serving dish and pull apart.
